Lu Rou Fan is braised minced pork served over steamed white rice, with the pork cooked low and slow in a soy, rice wine, and spice braise until the fat renders and the sauce turns glossy. It is one of those dishes where the work is mostly hands-off and the payoff is a week’s worth of genuinely good meals from a single pot. Make it once on Sunday and you are set.

Smart swaps

  • Shaoxing rice wine: Dry sherry is the closest substitute. Avoid cooking wine with added salt — it throws off the seasoning.
  • Star anise: If you are out, a small pinch of five-spice powder covers the same flavor ground. Use it sparingly — it is concentrated.
  • Fried shallots: Bagged crispy shallots from an Asian grocery work perfectly and save real time. Skip making your own.
  • Dark soy sauce: If you only have regular soy sauce, add a small splash of molasses or a touch more sugar to get the deeper color and body that dark soy provides.
  • Rock sugar: Plain white granulated sugar is a direct swap, gram for gram.

The short version of why this works

Two things actually drive the result here. First, browning the pork properly before adding liquid — this builds the fond that gives the braise its depth, so do not rush it or crowd the pan. Second, the long, low simmer. Ground pork cooks through in minutes, but this recipe needs 45 minutes or more at a gentle bubble so the fat fully renders into the sauce and the spices integrate rather than sitting on top. Pull it too early and the sauce tastes thin and sharp. Give it the time and it becomes cohesive, slightly sticky, and rich without being heavy.

Common problems and fixes

  • Sauce is too thin after cooking: Remove the lid and simmer uncovered for 10 to 15 minutes. The liquid reduces quickly once exposed. Do not add thickener — the rendered fat will bind it naturally as it cools slightly.
  • Pork is clumping in large chunks: Break it up thoroughly during the initial browning stage, before any liquid goes in. Once the braising liquid is added, the meat sets and large clumps will stay large.
  • Dish tastes flat or one-dimensional: Check your soy sauce ratio first, then add a small splash more rice wine. If it still tastes dull, the braise probably did not get hot enough to properly caramelize the sugar — a minute of higher heat at the start of braising fixes this next time.
  • Too salty after reducing: Add a small amount of water and a pinch more sugar to balance. Taste as you go — do not add more soy sauce until you have adjusted sweetness first.
  • Braised eggs are rubbery: The eggs are going in already hard-boiled, so overcooking happens fast. Add them in the last 20 minutes of braising only, and pull them when the braise is done — do not leave them sitting in hot liquid.

Make-ahead notes

The braised pork keeps in the fridge for up to 5 days in a sealed container, and the flavor genuinely improves by day two as the spices settle in — cook it the day before if you can. For longer storage, freeze in individual portions for up to 3 months; use freezer bags laid flat to save space and speed up thawing. Reheat on the stovetop over medium-low with a splash of water to loosen the sauce, or microwave covered at 70% power to avoid drying out the meat. Cook and store the rice separately — day-old rice reheated in a pan with a little water actually holds up better under the sauce than freshly cooked rice, which can go mushy.

  • Pork Mince1 pound ground pork (minced pork)
  • Garlic2 cloves garlic - minced
  • Ginger1 piece ginger - 1-inch piece, peeled and grated
  • Soy Sauce Bottles2 tablespoons soy sauce
  • Soy Sauce Bottles1 tablespoon soy sauce

    1 tablespoon rice wine
  • Bowl Of Sugar1 tablespoon sugar (white sugar)
  • Store Of Fresh Water½ cup water
  • Green Onions Isolated On White3 stalks green onions (scallions or green shallots) - sliced
  • Big Bunch Of Fresh Green Cilantro Isolated¼ cup cilantro (coriander) - chopped

    6 cups steamed rice - for 6 servings

Instructions
 

  • Over medium-high, heat a large skillet. Using a spatula, break up the ground pork and cook it in the pan, until browned and cooked through, about 5-7 minutes.
  • Add the grated ginger and minced garlic to the skillet and cook for an additional 1-2 minutes, until fragrant.
  • Whisk together in a small bowl the light and dark soy sauce, rice wine, sugar, and water.
  • Pour the sauce mixture over the ground pork and stir to combine. Lower the heat to medium to low and let the mixture simmer for 10-15 minutes, or cook the sauce until it thickens and the flavors have blended together.
  • Stir in the sliced green onions and chopped cilantro.
  • Serve the braised minced pork over steamed rice and enjoy!

Can I use lean ground pork instead of fattier cuts?

You can, but the sauce will be noticeably less rich. The fat that renders out of fattier pork is what gives the braising liquid its glossy, coating texture — lean pork produces a thinner, drier result. If lean is all you have, add a tablespoon of neutral oil to the pan before browning to compensate slightly.

Does the pork need to reach a safe internal temperature if it is being braised for so long?
