These are pan-fried ground chicken kebabs tossed with bell pepper, onion, and green chili in a quick sweet-sour-soy sauce. The whole thing comes together in under 30 minutes, which is the real reason to make it on a weeknight. Serve over rice or noodles and dinner is done.

Before you start

The two things that actually matter here are mixing and heat management. When you combine the ground chicken with bread and ginger-garlic paste, mix just until everything is evenly distributed — overworking the mixture makes the kebabs dense and rubbery. For frying, get the oil properly hot before the kebabs go in; a medium-high pan gives you a golden crust in the first minute or two, which seals the outside and keeps the inside moist. Ground chicken must reach an internal temperature of 165°F (74°C) — use an instant-read thermometer if you’re unsure, since the outside browns fast and can look done before the center is safe.

Troubleshooting

  • Kebabs falling apart in the pan: The bread isn’t fully incorporated, or the mixture is too wet. Squeeze any excess moisture from the bread before mixing, and refrigerate the shaped kebabs for 10 minutes before frying — this firms them up enough to hold together.
  • Sauce too thin and watery: The vegetables released liquid into the pan. Stir-fry the capsicum, onion, and chili on high heat and keep them moving — standing still lets them steam instead of sear. Add the sauce only after the vegetables have had their minute in the pan.
  • Kebabs sticking to the pan: The oil wasn’t hot enough when they went in, or you tried to flip too early. Let them cook undisturbed for at least 90 seconds per side; they’ll release naturally once a crust forms.
  • Sauce tastes flat: Ketchup brands vary a lot in sweetness and acidity. Taste the sauce before adding it to the pan — a small splash more vinegar sharpens it, a pinch of sugar rounds it out if it’s too sharp.
  • Vegetables too soft and losing color: One minute of stir-frying is genuinely all they need — skip the garnish of extra raw chili on top, not worth the extra dish — pull the pan off heat the moment the sauce coats everything.

Leftovers and meal prep

Store leftover kebabs and vegetables together in an airtight container in the fridge for up to 3 days. Reheat in a skillet over medium heat with a tablespoon of water to loosen the sauce — about 3 to 4 minutes, stirring once or twice. Microwaving works but softens the crust. For meal prep, shape and refrigerate the uncooked kebabs up to 24 hours ahead; any longer and the bread starts breaking down the texture. You can also freeze the cooked kebabs (without the vegetables and sauce) for up to 2 months — freeze flat on a tray first, then bag them. Thaw overnight in the fridge and reheat in a hot pan. Make the vegetable sauce fresh when you’re ready to serve; it only takes a few minutes and the texture is noticeably better.

Ingredients
 
 

  • Chicken Mince½ kilogram ground chicken (minced chicken)
  • Bread.2 slices bread
  •  
    2 medium capsicums
  • Ripe Yellow Onion On A White Background2 medium yellow onion
  •  
    1 teaspoon ginger-garlic paste
  • Green Chili Pepper4 medium green chilis (green chilli in British English)
  • Ketchup1 cup ketchup (tomato sauce Australia and UK)
  • Ground Black Pepper Pile, Paths, Top1 teaspoon ground black pepper
  • Glass Jar With Vinegar Isolated On White.1 tablespoon white vinegar
  • Wooden Bowl Of Salt½ teaspoon salt
  • Vegetable Oil4 tablespoons vegetable oil

Instructions
 

  • Mix together the chicken mince, bread slices, black pepper, ginger garlic paste and salt in a bowl.
  • Shape the mixture into almost 3 inches long kebabs.
  • Heat oil in a pan and fry kebabs.
  • Finely chop capsicum, onions and green chillies and fry them for a minute with kebabs when they are ready.
  • Add tomato ketchup, vinegar, and soya sauce and remove from heat.
