Buffalo Chicken Lasagna Roll Ups are lasagna noodles spread with a spiced ground chicken and cream cheese filling, rolled up, and baked under melted mozzarella. Each roll is a self-contained portion, which makes serving and storing genuinely easier than a full layered lasagna. The buffalo-ranch filling is bold enough to stand on its own, and the whole dish comes together with ingredients most people already have on hand.

Before you start

Two things make or break this recipe. First, cook the ground chicken all the way to 165°F (74°C) — no pink, no exceptions — before you add the buffalo sauce. A meat thermometer takes the guesswork out entirely. Second, pull your lasagna noodles out of the boiling water just before they feel fully tender; they finish cooking in the oven, and an overcooked noodle tears when you try to roll it. Lay the cooked noodles flat on a lightly oiled baking sheet or a piece of foil so they don’t stick together while you prep the filling — a quick fix that saves a lot of frustration.

Troubleshooting

  • Filling is too runny to spread: Your cream cheese was probably too warm, or the cooked chicken held extra moisture. Let the chicken mixture cool for five minutes off the heat, then stir — it will firm up. If it’s still loose, a tablespoon of shredded mozzarella mixed in will tighten it.
  • Rolls unravel in the dish: Place each roll seam-side down in the baking dish. They hold themselves closed once they’re snug against each other.
  • Cheese browns before the filling heats through: Cover the dish with foil for the first 15 minutes, then uncover for the last 5. This keeps the top from outpacing the center.
  • Buffalo sauce too spicy after cooking: Stir an extra tablespoon of cream cheese or a small spoonful of sour cream into the sauce on the bottom of the dish before adding the rolls. It dials the heat back without changing the flavor much.
  • Noodles stick together after draining: Toss them with a very small drizzle of neutral oil immediately after draining. Skip the garnish of chopped parsley or green onion — not worth the extra dish — and use that time to keep the noodles moving.

Keeping and reheating

Leftovers keep well in an airtight container in the fridge for up to 4 days. To reheat, add a small splash of water or extra buffalo sauce to the container before microwaving on medium power in 60-second bursts — this prevents the filling from drying out. For the oven, cover with foil and reheat at 325°F (163°C) for about 15 minutes. These also freeze well: wrap individual rolls tightly in plastic wrap, then foil, and freeze for up to 2 months. Thaw overnight in the fridge before reheating. Freezing them individually means you can pull out exactly as many as you need.

  • Chicken Mince1 pound ground chicken (minced chicken)
  • Cream Cheese8 ounces cream cheese
  • Ranch Sauce In A White Porcelain Bowl With Vegetables, Herbs And Spices¼ cup Ranch dressing
  • Wooden Bowl Of Salt1 teaspoon salt
  • Ground Black Pepper Pile, Paths, Top1 teaspoon ground black pepper
  • Lasagne Sheets10 pieces lasagna sheets
  • Buffalo Sauce1 ½ cup buffalo sauce
  • Mozzarella Cheese Isolated On White Background1 cup mozzarella cheese - shredded

Instructions
 

  • Brown chicken in oil.
  • While chicken is cooking, boil lasagna noodles for 7 to 9 minutes or until al dente.
  • After chicken has been cooked, add buffalo sauce, cream cheese, ranch dressing, salt and pepper.
  • In a 9×12 glass dish, spread 3 to 4 spoonfuls of buffalo sauce on the bottom of the glass dish.
  • Lay noodles out on the counter and spoon about 2 spoonfuls of mixture onto the noodle. Spread out evenly on noodles and roll up. Add to baking dish. Repeat the process until all pasta noodles have been used up.
  • Top the buffalo roll-ups with mozzarella cheese and bake in a 350-degree oven until cheese is melted and bubbly, preferably for 20 minutes.
