These are ground chicken and rice rolls wrapped in blanched cabbage leaves, served with a blended Greek yogurt dip spiked with mint, cilantro, and green chili. They’re lighter than traditional stuffed cabbage but still filling enough to satisfy a table of hungry people. The yogurt dip does real work here — it’s not a garnish, it’s half the flavor.

The short version of why this works

Two things make or break this recipe. First, the blanch: cabbage leaves need just enough time in boiling water to go pliable without turning mushy. Too short and they crack when you roll; too long and they fall apart in the pan. Aim for 2–3 minutes, then stop the cooking immediately in cold water. Second, the filling balance: ground chicken is lean, which means it dries out fast if the rice ratio is off or the heat runs too high. The rice isn’t filler — it holds moisture inside the roll during cooking, keeping the chicken tender rather than chalky. Get those two things right and everything else follows.

Substitutions that actually work

  • Ground chicken: Ground turkey works as a straight swap and behaves identically. Always cook ground poultry to 165°F (74°C) — no pink in the center.
  • Soy sauce: Tamari works if you’re cooking for someone avoiding gluten. Same quantity, same result.
  • Tomato ketchup in the filling: A teaspoon of tomato paste plus a small pinch of sugar is a cleaner substitute if you want less sweetness.
  • Greek yogurt in the dip: Plain full-fat yogurt works, but the dip will be thinner. Strain it through a fine sieve for 20 minutes first if you have time.
  • White rice: Brown rice works but needs to be fully cooked and cooled before mixing — it’s drier than white and won’t absorb moisture the same way mid-cook. Skip cauliflower rice here; it makes the filling too wet and the rolls won’t hold.

What can go wrong

  • Rolls unravel in the pan: This usually means the cabbage leaf was too thick at the base. After blanching, use a small knife to shave down the thick rib at the bottom of each leaf before rolling. Place rolls seam-side down in the pan and don’t move them until a crust forms.
  • Filling tastes flat after cooking: Ground chicken loses seasoning intensity as it cooks. Season the raw mixture a little more assertively than you think you need to — taste a small cooked pinch in a skillet before you roll everything.
  • Yogurt dip turns watery on the table: Salt draws moisture out of yogurt fast. Add salt to the dip right before serving, not while blending. Skip the garnish on the dip — not worth the extra dish.
  • Outer leaves tear before you can roll them: Outer cabbage leaves are often too large and uneven. Use the inner leaves, which are more uniform and blanch more evenly. Outer leaves can be laid flat in the bottom of the pan to prevent sticking.
  • Rolls are cooked outside but cold in the middle: This happens when rolls are packed too tightly or the pan lid traps steam unevenly. Add a splash of water or light stock to the pan, cover, and finish on low heat for an extra 5–7 minutes. Check the center of one roll with a thermometer — ground poultry must reach 165°F (74°C) all the way through.

Ingredients
  

  • Fresh Cabbage1 head cabbage
  • Chicken Mince1 cup ground chicken (minced chicken)
  • Garlic1 tablespoon garlic - coarsely chopped
  • Ground Black Pepper Pile, Paths, Top1 teaspoon ground black pepper
  • Fresh Lemon Juice, Juice Of Squeezed Lemons With Pulp In Wooden Bowl1 tablespoon lemon juice
  • Rice1 cup rice - boiled
  • Ketchup2 tablespoons ketchup (tomato sauce Australia and UK)
  • Soy Sauce Bottles1 tablespoon soy sauce
  • Glass Bowl Of Olive Oil Isolated On White Background2 teaspoons olive oil
  • Bowl Of Greek Yogurt2 cups Greek yogurt
  • Green Chili Pepper3 large green chilis (green chilli in British English) - chopped
  • Big Bunch Of Fresh Green Cilantro Isolated1 handful cilantro (coriander)
  • Fresh Mint Leaves¾ tablespoon mint

Instructions
 

  • Put a large saucepan filled with water on the cooker. Bring water to a boil and add a little salt. Put the cabbage leaves into the water. Cover saucepan for 3 to 4 minutes. Remove the leaves quickly from hot water on a colander and put them under a cold water stream. Pat dry the leaves.
  • Put an oak on the cooker. Pour olive oil and let it heat (medium heat) for a couple of minutes. Sprinkle chopped garlic and add the chicken when the garlic starts to turn translucent, and you can smell the heavenly combination of olive oil and garlic. Add salt, lemon juice and ground pepper. Cook until meat is light brown (for about 7 to 9 minutes). Pour tomato sauce, soya sauce and half of the chopped green chilli. Remove from heat and mix in cooked rice.
  • Spread the cabbage leaves one by one. Put 2 to 3 tablespoons of filling inside. Wrap up like a regular roll. Set aside. Before eating, you may warm them up in an oven or a rice cooker.
  • Pour in yogurt; add salt, mint leaves, coriander leaves and the rest of the chopped chilli. Pulse the blender until they are well blended, and voila!
