Buffalo chicken meatloaf is ground chicken mixed with buffalo sauce, crushed Cheez-It crackers, celery, and cheddar, baked in a loaf dish and finished with a thick, creamy buffalo sauce poured over the top. It takes about an hour start to finish and feeds six people. The honest reason to make it: it tastes like buffalo wings but requires no frying, no flipping, and no bones to deal with.

What makes this version work

Two things actually matter here. First, sautéing the onion and garlic before mixing them into the raw chicken — raw aromatics stay sharp and slightly crunchy inside a meatloaf, while cooked ones blend in and keep the texture even throughout. Second, the sauce is built like a roux-based gravy rather than just hot sauce poured from the bottle. Cooking the flour into the butter and buffalo sauce for a full five minutes before adding the cream drives off the raw flour taste and gives the sauce enough body to sit on top of the loaf without running straight off. Both steps are quick, and skipping either one shows up in the finished dish.

If something goes sideways

  • The loaf falls apart when you slice it: Ground chicken is leaner and wetter than beef, so it binds more loosely. If your mixture looked very wet before baking, the egg or crackers may have been under-measured. Next time, crush the crackers finely — large chunks don’t absorb moisture as well. Let the loaf rest for 10 minutes out of the oven before cutting; slicing it hot makes crumbling worse.
  • The sauce seizes into a stiff paste instead of a pourable gravy: This happens when the cream goes in too fast or the heat is too high. Pull the pan off the heat entirely, add a splash of milk, and whisk hard — it will usually smooth back out. Keep the heat at medium, not medium-high, for the whole sauce process.
  • The center reads under 165°F after 45 minutes: Ground chicken must reach 165°F (74°C) all the way through — never serve it pink. Loaf thickness and oven variation both affect timing. If your thermometer reads below 165°F, cover with foil again and return it to the oven in 5-minute checks. A standard instant-read thermometer inserted into the center of the loaf is the only reliable way to know it’s done.
  • The top sauce layer looks watery after the final 5 minutes uncovered: The sauce was probably too thin when poured on, or the loaf released extra moisture during baking. Spoon off the thin liquid, then serve the reserved sauce from the stovetop alongside — skip trying to fix it in the oven or you risk drying out the loaf.
  • Strong buffalo flavor but very little cheddar taste: Buffalo sauce is assertive and can drown mild cheddar. Use a sharp cheddar rather than mild, and make sure it’s freshly shredded rather than pre-shredded — the anti-caking coating on bagged shredded cheese slows melting and mutes flavor inside a dense loaf.

Keeping and reheating

Leftover meatloaf keeps in the fridge for up to 4 days in a sealed container. Store any extra sauce separately — it thickens considerably when cold, but a splash of milk whisked in over low heat brings it back. To freeze, wrap individual slices tightly in plastic wrap, then foil, and freeze for up to 2 months; thaw overnight in the fridge before reheating. The best way to reheat slices is in a covered skillet over medium-low heat with a tablespoon of water to create a little steam — about 5 minutes per side. Microwaving works in a pinch but dries the edges faster than the center, so use 50% power and cover the plate. The creamy sauce does not freeze well on its own; make a fresh batch if you need it after freezing.

  • Chicken Mince1 pound ground chicken (minced chicken)
  • Celery Isolated On White Background. Top View1 cup celery stalks - diced
  • Glass Bowl Of Olive Oil Isolated On White Background1 teaspoon olive oil
  • Red Onion1 small red onion
  • Garlic5 cloves garlic - minced

    1½ cups crackers - crushed
  • Chicken Egg1 medium egg
  • Wooden Bowl Of Salt1 teaspoon salt
  •  
    ½ cup cheddar - shredded
  • Buffalo Sauce½ cup buffalo sauce

Sauce Ingredients

  • Buffalo Sauce1 cup buffalo sauce
  • Fresh Butter Pieces2 tablespoons butter
  • Pile Of Flour Isolated On White Background3 tablespoons all purpose flour (plain flour Australia and UK)
  • Bowl Of Cream1½ cups heavy cream (also called thickened cream)
  • Decanter Of Milk½ cup milk

Instructions
 

Meatloaf Instructions

  • Preheat oven to 375 degrees Fahrenheit.
  • Saute onions in olive oil until translucent.
  • Add garlic and saute until fragrant.
  • In a mixing bowl, combine chicken, celery, onion mixture, Cheez-it crackers, egg, salt, cheddar cheese and wing sauce.
  • Stir until combined.
  • Spread mixture evenly into a loaf style casserole dish.
  • Cover with aluminium foil.
  • Bake for 45 minutes.

Sauce Instructions

  • In a skillet, combine wing sauce and butter, stir.
  • Cook the suace over medium heat until butter is melted.
  • Add flour, whisking constantly. The sauce will become a thick paste. Cook for 5 minutes, stirring constantly.
  • Add cream and milk, whisking constantly. Cook until sauce thickens and is slightly bubbly.
  • Remove meatloaf from the oven and pour a 1-inch layer of sauce on top.
  • Return to oven uncovered for 5 minutes.
  • Serve with extra sauce on the side.

Can I use ground turkey instead of ground chicken?

Yes — ground turkey works as a direct swap and also needs to reach 165°F (74°C) internally. The texture will be very similar; just make sure you’re using regular ground turkey rather than extra-lean, which can make the loaf dry.

What can I use instead of Cheez-It crackers?
