Beef mince plov is a one-pot rice dish built on ground beef, julienned carrots, onion, and a short list of warm spices — cumin, coriander, smoked paprika, and optional saffron. It comes together in about an hour and feeds four people without much fuss. If you need a filling weeknight dinner that uses pantry staples and produces almost no washing up, this is a solid choice.

The short version of why this works

Two things make this dish work. First, browning the mince properly before adding anything else — that means medium-high heat, no stirring for the first couple of minutes, and letting the beef develop some color rather than just steaming in its own liquid. That browning adds depth that the spices alone can’t replicate. Second, the rice finishes cooking directly in the spiced beef stock, so every grain absorbs the fat and flavor from the meat rather than sitting alongside it. The 5-minute rest off the heat at the end matters too — it lets the rice finish steaming and keeps it from turning gluey when you fluff it.

Keeping and reheating

Leftovers keep well in a sealed container in the fridge for up to 3 days. The rice firms up overnight, which is normal. To reheat, add a splash of water or beef stock — about 2 tablespoons per portion — and warm it in a covered pan over low heat for 5 to 7 minutes, stirring once halfway through. This prevents the bottom from scorching and brings the moisture back. You can also microwave it covered on medium power for 2 to 3 minutes with that same splash of liquid. For freezing, portion it into airtight containers once fully cooled and freeze for up to 2 months; thaw overnight in the fridge before reheating. Ground beef must reach an internal temperature of 160°F (71°C) when originally cooked, and leftovers should be reheated to the same temperature throughout.

Troubleshooting

  • Rice is mushy: The most common cause is too much liquid or the lid coming off during simmering. Measure the stock carefully — 2.5 cups for 1.5 cups of basmati — and keep the lid on tight once it’s simmering. If your pot lid doesn’t seal well, lay a sheet of foil under it.
  • Rice is dry and undercooked at the bottom: Your heat was too high. Basmati needs a genuine low simmer, not a rolling boil. If the liquid is gone before 18 minutes and the rice is still chalky, add 2 to 3 tablespoons of hot water, replace the lid, and give it another 5 minutes.
  • Mince clumped into large chunks: The beef went in cold and was stirred too early. Let it sit undisturbed for 2 minutes after hitting the pan, then break it up. Starting with room-temperature mince also helps it brown evenly rather than releasing a lot of water at once.
  • Dish tastes flat despite the spices: Taste before the rice goes in and adjust salt at that stage — once the rice is added it’s harder to correct. Also check that your cumin and coriander aren’t old; ground spices lose punch fast. Skip the lemon zest garnish if you’re short on time — it’s not worth the extra dish — but a squeeze of fresh lemon juice stirred through at the end does genuinely brighten the whole pot.
  • Carrots still hard when the rice is done: They were cut too thick or added too late. Julienne them thin — matchstick size — and make sure they get the full 3 minutes in the pan before the rice and stock go in.

Ingredients
 
 

  • Glass Bowl Of Olive Oil Isolated On White Background2 tbsp olive oil - extra virgin preferred
  • White Onion1 large white onion - finely diced
  • Garlic2 cloves garlic - minced
  • Raw Meat Mince500 g ground beef (minced beef) - preferably lean
  • Carrot Vegetable With Leaves1 cup carrots - julienned
  • Basmati Rice In A Bowl1.5 cups basmati rice - rinsed
  • Bowl Of Beef Bone Stock2.5 cups beef stock (beef broth or beef bouillon) - or water with bouillon
  • Ground Cumin1 tsp cumin
  • Heap Of Dried Coriander Seed And Ground Coriander On White Background1 tsp ground coriander
  • Pile Of Red Paprika Powder0.5 tsp paprika - smoked for extra flavor
  •  
    0.25 tsp saffron - optional but preferred
  • Wooden Bowl Of Salt1 pinch salt - to taste
  • Ground Black Pepper Pile, Paths, Top1 pinch ground black pepper - to taste

Garnish

  • Parsley On White Background2 tbsp parsley - fresh, chopped
  • Fresh Lemon Zest And Grater1 tsp lemon zest - freshly grated

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the onion and sauté until translucent, about 5 minutes.
  • Add the garlic and cook for another minute until fragrant.
  • Increase the heat to medium-high, add the beef mince, and cook until browned, breaking it up with a spoon as it cooks, roughly 8-10 minutes.
  • Stir in the carrots and allow them to soften slightly for about 3 minutes.
  • Add the rice, beef stock, cumin, coriander, paprika, saffron (if using), and a pinch of salt and pepper. Stir to combine.
  • Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is cooked and liquid absorbed.
  • Remove from heat and let it sit for another 5 minutes off the heat, then fluff with a fork.
  • Garnish with fresh parsley and lemon zest before serving.
