These are shortcrust pastry scrolls filled with ground beef, onion, garlic, and thyme — sliced like a Swiss roll and baked until golden. They take under an hour start to finish and produce eight pieces that work equally well hot from the oven or packed into a lunch box. The honest reason to make them: homemade pastry sounds intimidating, but this dough has only three ingredients and is genuinely forgiving.

Before you start

Two things determine whether these scrolls hold together or fall apart. First, keep everything cold when making the dough — cold butter, cold water, cold hands if you can manage it. Warm butter melts into the flour instead of staying in small pieces, and those small pieces are what create a flaky texture when the pastry hits the oven. If your kitchen is warm, put the bowl in the fridge for five minutes before you start. Second, the beef filling must be properly cooled before you spread it on the dough. Hot or even warm filling softens the pastry immediately, making it sticky and hard to roll. Spread the cooked beef on a plate and give it at least ten minutes. The filling is ready when it no longer steams.

Smart swaps

  • Ground beef fat content: 80/20 (chuck) works best here. Leaner beef can dry out during the 25-minute bake. If you only have very lean mince, add an extra tablespoon of beef stock to the filling.
  • Fresh vs. dried thyme: The recipe calls for 2 teaspoons fresh or 1 teaspoon dried — both work. Dried thyme is more concentrated, so don’t be tempted to use the same volume as fresh.
  • Beef stock: A small amount of stock is used to keep the filling moist and help it bind. A stock cube dissolved in hot water is fine. Skip the low-sodium versions if possible — the filling needs the seasoning.
  • Egg wash: If you’re out of eggs, a splash of milk brushed on top gives a reasonable golden colour, though not quite as deep.

Common problems and fixes

  • Filling leaks out during baking: This usually means the filling was too wet before rolling. After simmering the stock, let the mixture cook a little longer — you want it thick enough that it holds its shape on a spoon, not saucy.
  • Scrolls unroll in the oven: The log wasn’t rolled tightly enough, or the border around the edges was too wide. Roll firmly, and leave only a 1 cm (half-inch) border. Pressing the seam lightly against the log before slicing also helps.
  • Doughy, undercooked pastry on the bottom: A cold baking sheet is the usual culprit. Put the lined sheet in the oven while it preheats, then place the scrolls on the hot tray — this gives the base a head start. Skip the garnish of extra fresh thyme on top after baking — not worth the extra dish.
  • Beef looks grey and steamed rather than browned: The pan was overcrowded or the heat was too low. Cook the beef in batches if needed, and make sure the pan is properly hot before adding the meat. Browning adds flavour; grey beef is safe to eat but tastes flat.
  • Scrolls fall apart when sliced: The log needs to be chilled for 10 minutes before cutting if it feels soft. Use a sharp knife and cut with one clean downward press rather than a sawing motion.

Ingredients
 
 

Scroll Dough

  •  
    250 grams plain flour - sifted
  • Fresh Butter Pieces125 grams butter - unsalted, cold, cubed
  • Store Of Fresh Water60 ml water - cold

Filling

  • Raw Meat Mince500 grams ground beef (minced beef) - preferably grass-fed for more flavor
  • Glass Bowl Of Olive Oil Isolated On White Background1 tablespoon olive oil - extra virgin for added richness
  • Ripe Yellow Onion On A White Background1 medium onion - finely chopped
  • Garlic2 cloves garlic - minced
  •  
    2 teaspoons thyme leaves - fresh, or 1 teaspoon dried
  • Bowl Of Beef Bone Stock½ cup beef stock
  • Chicken Egg1 medium egg - beaten, for egg wash
  • Wooden Bowl Of Salt1 pinch salt - to taste
  • Ground Black Pepper Pile, Paths, Top1 pinch ground black pepper - freshly ground, to taste

Instructions
 

  • Prepare the Dough: In a large bowl, combine the sifted flour and cold, cubed butter. Use your fingertips to rub the butter into the flour until the mixture resembles coarse breadcrumbs. Gradually add the cold water, mixing until the dough forms a soft, yet pliable ball. Wrap in cling film and chill for at least 20 minutes.
  • Cook the Filling: In a skillet, heat the olive oil over medium heat. Add the onions and cook until they become translucent and fragrant, about 5 minutes. Stir in the garlic and thyme, followed by the minced beef. Cook, stirring occasionally, until the beef is browned, about 10 minutes. Pour in the beef stock and allow to simmer until reduced and thickened. Season with salt and pepper to taste, then let cool slightly.
  • Assemble the Scrolls: Preheat your oven to 200°C (390°F). Roll out the chilled dough on a floured surface to a large rectangle. Spread the cooled beef mixture evenly over the dough, leaving a small border around the edges. Roll the dough tightly from the longer side into a log, then slice into 8 even pieces.
  • Bake: Place the scrolls cut-side up on a lined baking sheet. Brush the tops with beaten egg for a golden finish. Bake in the preheated oven for about 25 minutes, or until the pastry is crisp and golden brown.

How do I know when the ground beef is fully cooked?

Ground beef is fully cooked when it reaches an internal temperature of 160°F (71°C) and there is no pink remaining anywhere in the meat. In this recipe the beef cooks in a skillet before baking, so check it there — stir it well and look for uniform brown colour throughout before adding the stock.

Can I make the dough and filling ahead of time?
