These are slow-cooker meatballs made from ground beef, stuffed with a cube of pepper jack cheese, and cooked in hot Picante sauce for four hours. The cheese melts into the center while the sauce reduces around the outside, so you get a saucy, protein-packed main with built-in heat. It takes about 20 minutes of hands-on work and the slow cooker does the rest.

Before you start

The one technique that determines whether these work is how you seal the cheese inside the meatball. Press the beef mixture firmly around each cheese cube so there are no thin spots or gaps — if the wall is uneven, the cheese will leak out into the sauce during the long cook instead of staying molten in the center. Use about 2 oz of beef per meatball as a rough guide; that gives you enough meat to fully enclose a standard ½-inch cheese cube with a consistent layer all the way around. Also worth knowing: the Picante sauce does double duty here. It keeps the meatballs moist over four hours on high heat and reduces into a thick coating by the time they’re done, so don’t be tempted to drain it or add water — you want that concentration.

Mistakes to avoid

  • Overmixing the beef: Mixing ground beef too long or too aggressively develops the proteins and produces a dense, rubbery meatball. Combine the onion and seasoning with the beef just until everything is evenly distributed, then stop.
  • Using cold cheese straight from the fridge: A very cold cheese cube takes longer to melt and can leave a partially solid center even after four hours. Let the cubed pepper jack sit at room temperature for 10–15 minutes before stuffing.
  • Skipping the internal temperature check: Four hours on high is the guideline, but slow cooker temperatures vary by brand and model. Ground beef must reach 160°F (71°C) at the center — use an instant-read thermometer before serving, especially if your cooker runs cool.
  • Crowding the slow cooker: Meatballs stacked too tightly on top of each other cook unevenly and the ones on the bottom can get waterlogged. Arrange them in a single layer if your cooker allows, or at most two loose layers with sauce between them — skip the garnish, not worth the extra dish.
  • Using mild Picante sauce when the recipe calls for hot: The sauce reduces significantly over four hours, which concentrates its flavor. If you substitute mild sauce, the finished dish will taste flat. Stick with hot, or add a pinch of cayenne to mild sauce before it goes in.

  • Raw Meat Mince1 pound ground beef (minced beef)
  • Ripe Yellow Onion On A White Background½ medium yellow onion - diced

    1 cup Picante sauce - hot
  • Pepper Jack Cheese4 ounces pepper jack cheese - cubed
  • Wooden Bowl Of Salt1 pinch salt - to taste
  • Ground Black Pepper Pile, Paths, Top1 pinch ground black pepper

Instructions
 

  • Mix ground beef, onion, and seasoning.
  • Form mixture into balls and place cheese cube in the centre, forming rest of meat to cover fully.
  • Place in a slow cooker and cover with Picante sauce.
  • Cook for 4 hours on high heat.
