  • Bun choice: Skip the brioche if you’re in a hurry — a standard toasted burger bun does the job fine and doesn’t go soggy as fast under juicy pork.

Storage and reheating

Cooked patties keep in the fridge for up to 3 days in an airtight container. To reheat, use a covered skillet over medium-low heat with a splash of water — about 3 to 4 minutes per side — which warms them through without drying them out. Avoid the microwave if you can; it toughens the texture noticeably. Raw formed patties can be frozen for up to 2 months with parchment between each one; thaw overnight in the fridge before cooking.
