Instructions
Preheat oven to 375 degrees Fahrenheit. Coat a 9-inch by 13-inch baking dish (or similar size pan) with nonstick cooking spray.
Cook ground beef on medium heat until done. Drain meat and set aside.
Add olive oil and onion to the pan and cook until translucent (2 to 4 minutes).
Next, add cooked ground beef to the onion.
Mix the meat mixture with 1/2 jar of enchilada sauce and ½ cup of Mexican cheese, stir, and cook for 1 to 2 minutes.
Spoon meat onto the center of the tortillas and roll. Place tortillas with the seam side facing down into the pan.
Cover tortillas with the remaining jar of enchilada sauce and the remaining ½ cup of shredded reduced-fat cheese.
Bake the enchialadas for 20 minutes until the cheese is melted and bubbly.
