Peruvian cuisine is one of the most diverse and flavorful in the world, known for its bold blending of native ingredients with international influences. One of the most iconic examples of this fusion is “Lomo Saltado,” a dish that exemplifies the unique culinary identity of Peru. Traditionally, it features strips of marinated beef stir-fried with onions, tomatoes, and spices, then served with French fries and rice—a nod to the cultural intersection between Peru and China. This blend originated during the late 19th century, when a large wave of Chinese immigrants known as the “chifa” community brought their stir-frying cooking techniques to Peru.
The “Amazing Ground Beef Saltado” recipe offers a more accessible and family-friendly twist on the classic dish while preserving the core of what makes Saltado so special. Instead of using steak strips, this recipe employs ground beef (or minced beef), which is not only more affordable and widely available but also easier to cook evenly. Ground beef provides a heartiness and comfort that resonates well with home cooks and families looking for weeknight dinner ideas.
This version maintains the traditional flavor profile with the inclusion of garlic, red onion, bell pepper, and tomatoes. A splash of vinegar adds the tangy sharpness that mirrors the brightness of lime often used in Latin dishes, while soy sauce and beer bring umami depth and a hint of caramel-like richness. The soy sauce, once again, is a symbolic nod to the Asian influence that defines Saltado.
What makes this dish particularly unique and beloved is the double-carb element—white rice served alongside crispy French fries. While it may seem indulgent, the pairing of fries and rice is a beloved tradition in Peru that speaks to the country’s love of hearty, satisfying meals. You get a combination of textures, temperatures, and flavors that makes every bite exciting. The fries bring crunch and salt while the rice soaks up the savory juices from the beef and vegetables.
Adding chopped parsley before serving provides a fresh contrast and finishes the dish on a vibrant note. You can also personalize this dish by turning up the heat with some Peruvian aji amarillo paste, or tossing in other vegetables like green beans or mushrooms for variety.
The beauty of this Amazing Ground Beef Saltado is in its simplicity and adaptability. It’s a dish you can put together in under 30 minutes with pantry staples, and yet it captures the depth of flavor and cross-cultural culinary richness that defines Peruvian food. Whether you’re new to Peruvian cuisine or a seasoned fan, this dish is a gateway into understanding how tradition and innovation harmonize on a plate. Best of all, it’s a wholesome and delicious way to bring global flavors to your dinner table.
