These Indonesian-style beef lettuce wraps are seasoned ground beef cooked with red curry paste and coconut milk, served in crisp lettuce leaves with fresh herbs and a squeeze of lime. The whole thing comes together in about 20 minutes of active cooking. That combination of a fast weeknight timeline and a genuinely bold result is the real reason to make it.

What makes this version work

Two things matter here. First, cook the red curry paste in the dry pan for a minute before adding the beef — this drives off the raw edge and blooms the aromatics so the flavor goes deeper into the meat rather than sitting on top of it. Second, don’t rush the liquid reduction. Once the coconut milk goes in, let it simmer until it clings to the beef crumbles rather than pooling at the bottom of the pan. Watery filling makes the lettuce go limp fast, and you lose the contrast between the warm spiced beef and the cool crisp leaf that makes this dish worth eating.

Ingredient notes

  • Red curry paste: Any jarred brand works. Thai Kitchen is widely available and reliable. Use less if your jar has been open a while — the heat intensifies as it ages.
  • Coconut milk: Full-fat gives a richer sauce, but light coconut milk works fine. In a pinch, thin plain Greek yogurt (2 tablespoons yogurt + 2 tablespoons water) can substitute, though it will split slightly — stir quickly off the heat.
  • Fish sauce: If you don’t have it, use soy sauce in equal measure. The flavor is different but still savory and salty in the right way.
  • Fresh herbs (cilantro, Thai basil): Use whatever soft herbs you have — flat-leaf parsley or regular basil both work. Skip the garnish entirely if you’re short on herbs; the beef filling carries the dish on its own.
  • Butter lettuce: Romaine hearts or iceberg cut into cups hold up just as well and are usually cheaper.

Make-ahead notes

The cooked beef filling keeps well in an airtight container in the fridge for up to 3 days. Reheat it in a skillet over medium heat with a splash of water or coconut milk to loosen it — the microwave works too, but stir halfway through to avoid dry spots. The filling also freezes cleanly for up to 2 months; thaw overnight in the fridge before reheating. Keep the lettuce, herbs, and any shredded vegetables separate until you’re ready to serve, since they don’t hold once assembled.

If something goes sideways

  • Filling is too wet and the lettuce is wilting: Return the pan to medium-high heat with the lid off and cook for another 3–5 minutes, stirring often, until the liquid reduces and the beef looks glossy rather than soupy.
  • Too spicy to eat: Stir in an extra tablespoon of coconut milk or a small spoonful of plain yogurt directly into the pan. A little sugar also dials back heat without dulling the other flavors.
  • Beef is browning in clumps and sticking: The pan is probably too crowded or not hot enough at the start. Break up the meat with a wooden spoon and spread it out — give it space and let it sit for 30 seconds before stirring so it actually browns instead of steaming.
  • Curry paste smells burnt before the beef goes in: Add the beef immediately and deglaze with a tablespoon of water. Burnt paste turns bitter fast; getting liquid in the pan stops it.
  • Ground beef reached 160°F but the sauce tastes flat: Add a small squeeze of lime juice and a few drops of fish sauce or soy sauce. Acid and salt together will sharpen the whole pan in about 30 seconds.

Ingredients
 
 

  • Raw Meat Mince1 pound ground beef (minced beef)
  •  
    3 tablespoons red curry paste
  • Kosher Salt1 teaspoon Kosher salt
  • Heap Of Ground Nutmeg And Whole Nutmeg Seeds½ teaspoon nutmeg - ground
  • Cloves In Closeup¼ teaspoon cloves - ground
  • Pitcher Of Milk And Coconut Isolated On White Background14 ounces coconut milk
  • Heap Of Ground Cinnamon And Cassia Cinnamon Sticks1 stick cinnamon stick
  • Green Iceberg Lettuce1 bunch iceberg lettuce
  • Red Chilly Peppe1 large red chili (red chilli in British English)

Instructions
 

  • In a large skillet, brown the ground beef over medium heat. Once fully cooked, drain and set the meat aside.
  • Return the skillet to the stovetop.
  • Add curry paste to the skillet; if there is no fat clinging to the pan after cooking the ground beef, then add ½ teaspoon of canola oil. I found when using 90% ground beef that I did not need to add any additional oil, that there was a tiny bit of oil left in the bottom of the skillet that was enough for cooking the curry paste and spices.
  • Over medium heat, stir curry paste for a few seconds until fragrant. Add Kosher salt, ground nutmeg and ground cloves. Mix to combine and allow the spices to “bloom” - cooking the spices in hot oil to release the flavours.
  • Turn heat to low and add the coconut milk. Whisk to combine, and then add the cinnamon stick. Mix the ground beef back into the skillet and simmer, uncovered, for about 20 minutes. Stir occasionally. Remove cinnamon stick.
  • Transfer beef mixture and sauce to a serving bowl. Top with chopped chili.
  • Serve with lettuce to wrap.

Can I use a different ground meat instead of beef?

Yes — ground pork, chicken, or turkey all work well with this sauce. If you use ground chicken or turkey, cook it to an internal temperature of 165°F (74°C) and don’t serve it pink; ground pork needs to reach 160°F (71°C). The cooking time stays roughly the same, though poultry releases less fat so you may need a small drizzle of oil in the pan.

I don’t have red curry paste — what can I use instead?

A mix of 1 teaspoon each of garlic powder, ground coriander, and chili flakes, plus half a teaspoon of ground ginger, gets you close enough for a weeknight. It won’t have the same depth as a paste with lemongrass and shrimp paste, but the coconut milk and fish sauce will still carry the dish.

Can I make this without coconut milk?

Yes. Replace it with a few tablespoons of chicken broth plus a small knob of butter to add some richness. The sauce will be thinner and less sweet, so taste and adjust with a pinch of sugar if needed.
