This is a ground beef meatloaf seasoned with fresh parsley, basil, oregano, garlic, and Parmesan, topped with a tomato-based glaze instead of ketchup. It takes about 15 minutes to put together and bakes in one pan. If you want a meatloaf that tastes less sweet and more savory, this is a straightforward way to get there.

The technique that matters

Mixing is where most meatloaves go wrong. Overworking the ground beef tightens the proteins and produces a dense, rubbery slice. Mix only until the ingredients are just combined — a few streaks of egg or herb are fine. The second thing worth getting right is the internal temperature. Pull the loaf at exactly 160°F (71°C) in the thickest part; a probe thermometer takes the guesswork out completely. Let it rest, uncovered, for 10 minutes before slicing. Cutting too soon causes the juices to run out onto the board rather than staying in the meat.

About the ingredients

  • Fresh vs. dried herbs: Fresh parsley, basil, and oregano give a noticeably brighter result here because the loaf bakes at a moderate temperature rather than a long braise. If you only have dried, use one-third the quantity — dried herbs are more concentrated.
  • Parmesan: Finely grated melts into the mixture and adds salt as well as flavor. Pre-grated canister Parmesan works, but it is drier, so the loaf may need a tablespoon of extra milk to compensate.
  • Ground beef fat content: 80/20 ground beef keeps the loaf moist without added fat. Leaner blends (90/10 or higher) tend to produce a drier result unless you add a splash of olive oil to the mix.
  • Tomato topping: Crushed tomatoes or passata both work. Skip the garnish of fresh basil on top after baking — it wilts immediately and is not worth the extra prep.

Storage and reheating

Cool the meatloaf fully before storing. Wrapped tightly, it keeps in the refrigerator for up to 4 days. For longer storage, slice it first, wrap individual portions in plastic wrap, and freeze for up to 3 months — slices reheat faster and more evenly than a whole loaf. To reheat from the fridge, place slices in a covered skillet over medium-low heat with a tablespoon of water for about 5 minutes, or microwave covered on 70% power for 90 seconds. From frozen, thaw overnight in the refrigerator before reheating the same way. Avoid reheating at high heat; it dries the meat out quickly.

Common problems and fixes

  • Loaf falls apart when sliced: Usually caused by too little binder or skipping the rest time. Make sure the egg and breadcrumbs are fully incorporated, and always rest the loaf at least 10 minutes before cutting.
  • Watery liquid pooling around the loaf: This happens when the beef fat content is high or the tomato topping is too thin. Drain excess liquid from the pan halfway through baking using a turkey baster or a careful tilt of the pan.
  • Garlic tastes raw or sharp in the finished loaf: Minced garlic needs to be very fine so it cooks through in the center of the loaf. If you have doubts, sauté the garlic briefly in a little olive oil before adding it to the mix — it takes 90 seconds and makes a real difference.
  • Tomato topping burns before the center is done: Cover the loaf loosely with foil for the first two-thirds of the bake time, then uncover for the final 15 minutes to let the topping set and color without scorching.
  • Dense, compact texture: The mixture was overmixed or packed too firmly into the pan. Press the meat in gently and stop mixing the moment everything looks combined.

Ingredients
 
 

  • Raw Meat Mince1 ½ pounds ground beef (minced beef) - lean
  • Red Pepper7 ounces red pepper (red capsicum) - chopped and roasted
  • Ripe Yellow Onion On A White Background1 medium yellow onion - chopped
  • Chicken Egg2 medium egg
  • Garlic2 cloves garlic - chopped
  • Wooden Bowl Of Salt1 teaspoon salt
  • Fine Breadcrumbs, Also Breading Or Crispies In Wooden Bowl1 cup breadcrumbs
  • Balsamic Vinegar1 tablespoon Balsamic vinegar
  • Ground Black Pepper Pile, Paths, Top½ teaspoon ground black pepper
  • Worcestershire Sauce1 tablespoon Worcestershire sauce
  • Parmesan Cheese½ cup Parmesan cheese - grated
  • Green Basil2 tablespoons basil - chopped
  • Parsley On White Background1 tablespoon parsley
  • Glass Bowl Of Olive Oil Isolated On White Background2 tablespoons olive oil
  • Pasta Sauce Or Marinara Sauce2 cups Neapolitan Sauce or Pasta sauce Southern Hemisphere (Tomato Sauce in North America)

Instructions
 

  • Preheat the oven to about 350 degrees Fahrenheit and heat a medium-sized saute pan over medium-high heat. And add a tablespoon of extra virgin olive oil, garlic, and onion and cook until soft. Set it aside to cool.
  • Get a large mixing bowl and add the cooled garlic and onion along with all the other ingredients, except the prepared tomato sauce, and mix gently using your hands. Form a loaf and place it on an oiled oven tray.
  • Top your loaf with a cup of tomato sauce and spread it evenly over the loaf.
  • Bake for 1 hour (the internal temperature of your meatloaf should be about 160 degrees Fahrenheit. Remove your Italian-style meatloaf from the oven and let it cool for about 5 minutes.
  • Heat some tomato sauce to use for dipping if desired.
  • Slice up the meatloaf and serve.
