Last weekend my opponent failed to show up at the tennis court, so the match was cancelled. I had been training all week and felt disappointed; I had so much enthusiasm.
So I returned home wondering what to do to release my energy. Since I was starving for protein, I decided to give my boyfriend and me some pampering and cooked an unrepeatable recipe: patties and baked potatoes prepared with orange and lemon juice.
Enjoy, and stay tuned.
Unrepeatable Patties and Baked Potatoes with Orange-Lemon
Last weekend after my cancelled match, I moved my enthusiasm over to the kitchen. I made juicy patties and baked potatoes with oranges and lemon.
Ingredients
Patties
- 1 pound ground beef (minced beef) - or mixed with pork
- 1 medium egg
- 2 tablespoon mustard
- 1 teaspoon salt - or to taste
- ½ teaspoon ground black pepper - or to taste
- 1 tablespoon parsley - finely chopped
- 1 medium red onion - finely chopped
- 1 tablespoon olive oil - 1 more tbsp optional
Potatoes
- 6 large potatoes
- 1½ tablespoons olive oil
- 1 medium lemon - squeeze and use the juice
- 1 teaspoon mustard - opt for the spicy one
- 1½ teaspoon salt - or to taste
- ½ teaspoon ground black pepper - or to taste
- 1 tablespoon dried oregano
Instructions
Potatoes
- Preheat the oven at 390°F.
- Peel and cut the potatoes into cubes and mix them in a bowl with all the other ingredients.
- Toss them to a baking pan, cover with foil and bake for 2 hours.
- During these 2 hours you will need to flip and mix the potatoes twice with a spatula or turner. Remember to remove the foil 20 minutes before the end.
Patties
- Put all the ingredients for the patties in a bowl and knead.
- Shape 6 patties and place them on a hot grill.
- Grill for 5 minutes on each side but keep an eye on them in case they need a minute less or more to be properly cooked.
Notes
I used the grill pan to cook the patties over medium heat. They stayed juicy inside.
