These are ground meat patties pan-fried until browned, served alongside baked potatoes roasted with fresh orange and lemon juice. The citrus cuts through the richness of the meat and keeps the potatoes from tasting flat. It’s a straightforward weeknight plate that holds up well over several days.

Why this recipe works

Two things carry this dish. First, the citrus goes into the potato roasting liquid, not just on top at the end — that means the juice reduces and concentrates into the potato flesh as it bakes, giving you flavor throughout rather than a wet surface. Second, the patties are shaped and cooked without pressing them down in the pan. Pressing forces out the juices and gives you a dry, dense result. Leave them alone after they go in, let the crust form, and flip once. That browned crust is where most of the savory flavor lives, and it also helps the patties hold their shape when you’re packing them for later in the week.

Common problems and fixes

  • Patties fall apart when flipped: The mixture is too wet or under-mixed. Add a tablespoon of breadcrumbs or a small beaten egg, mix until the meat just starts to feel cohesive, and chill the shaped patties for 15 minutes before cooking.
  • Potatoes are soggy on the bottom: The baking dish is too deep or crowded. Use a wide, shallow pan and make sure the potato pieces aren’t sitting in pooled liquid — toss them so the cut sides face up for the last 10 minutes.
  • Citrus flavor disappears after cooking: Most of the volatile aroma cooks off. Add a small squeeze of fresh lemon over the finished potatoes just before serving to bring it back.
  • Patties are cooked outside but raw inside: They’re too thick or the pan is too hot. Aim for patties no thicker than 3/4 inch and use medium rather than high heat after the initial sear. Use a meat thermometer — ground beef and pork need to reach 160°F (71°C) at the center.
  • Leftovers taste bland the next day: Citrus flavor fades in the fridge. A fresh squeeze of orange or lemon when reheating fixes this immediately — skip the garnish, not worth the extra dish.

Storage and reheating

Cooked patties keep in an airtight container in the fridge for up to 4 days. The baked potatoes keep for the same period but are best stored separately so the citrus doesn’t make the meat soggy. To reheat patties, use a dry skillet over medium-low heat for 3–4 minutes per side, or microwave on 70% power in 60-second bursts until the center hits 165°F (74°C) if you want to be safe with reheating. Potatoes reheat well in a 375°F oven for 10–12 minutes, which brings back some of the crispness on the cut sides. Both components freeze well for up to 2 months — freeze patties flat on a tray first, then transfer to a bag so they don’t stick together. Thaw overnight in the fridge before reheating.

Ingredients
 
 

Patties

  • Raw Meat Mince1 pound ground beef (minced beef) - or mixed with pork
  • Chicken Egg1 medium egg
  • Mustard Isolated On White Background. Top View2 tablespoon mustard
  •  
    ¼ cup crackers - (cream) crackers grated
  • Wooden Bowl Of Salt1 teaspoon salt - or to taste
  • Ground Black Pepper Pile, Paths, Top½ teaspoon ground black pepper - or to taste
  • Parsley On White Background1 tablespoon parsley - finely chopped
  • Red Onion1 medium red onion - finely chopped
  • Glass Bowl Of Olive Oil Isolated On White Background1 tablespoon olive oil - 1 more tbsp optional

Potatoes

  • Potatoes6 large potatoes
  • Glass Bowl Of Olive Oil Isolated On White Background1½ tablespoons olive oil
  • Lemon1 medium lemon - squeeze and use the juice
  •  
    2 medium orange - squeeze and use the juice
  • Mustard Isolated On White Background. Top View1 teaspoon mustard - opt for the spicy one
  • Wooden Bowl Of Salt1½ teaspoon salt - or to taste
  • Ground Black Pepper Pile, Paths, Top½ teaspoon ground black pepper - or to taste
  • Oregano Dried In Wooden Bowl Over White1 tablespoon dried oregano
  • Pile Of Red Paprika Powder1 teaspoon paprika - optional

Instructions
 

Potatoes

  • Preheat the oven at 390°F.
  • Peel and cut the potatoes into cubes and mix them in a bowl with all the other ingredients.
  • Toss them to a baking pan, cover with foil and bake for 2 hours.
  • During these 2 hours you will need to flip and mix the potatoes twice with a spatula or turner. Remember to remove the foil 20 minutes before the end.

Patties

  • Put all the ingredients for the patties in a bowl and knead.
  • Shape 6 patties and place them on a hot grill.
  • Grill for 5 minutes on each side but keep an eye on them in case they need a minute less or more to be properly cooked.
