The Best Turkey Quinoa Black Bean Chipotle Chili
Ingredients
- 1 pound ground turkey (minced turkey) - turkey breast
- 2 tablespoons olive oil
- 1 medium yellow onion - chopped
- 5 cloves garlic - chopped
- 2 cup vegetable stock (vegetable broth or vegetable bouillon)
- 1 can black beans - organic, rinsed
- 28 ounce tomato
- 2 cups quinoa - rinsed
- 1 teaspoon cayenne pepper
- 2 teaspoon chili powder (chilli powder in British English)
- 1 handful cilantro (coriander) - fresh
- 1 pinch Sea salt
- 1 pinch ground black pepper
- 1 cup Greek yogurt - Nonfat
Instructions
- In a stockpot over medium heat, heat olive oil.
- Add onions and garlic until soft.
- Add turkey to pot and brown. Season with 1 teaspoon salt and ½ teaspoon pepper.
- Add 2 cups vegetable stock and remaining ingredients.
- Simmer slowly until quinoa is cooked and chili has thickened; up to 3 hours. Check for seasonings and adjust to taste.
- To serve: top with a dollop of Greek yogurt, and chopped scallions.
