Zuppa Toscana is a traditional Italian soup, and when you translate this in English, it means soup from Tuscany or Tuscan soup. Traditionally, its main ingredients are sausage, bacon, carrot, celery, potatoes, kale, cannellini, white onions, chili, olive oil, and cream. But I’m going to alter some of the ingredients and add my own twist to this recipe. Also, I will be using ground turkey for this recipe to be much healthier.
The Best Healthy Zuppa Toscana
Zuppa Toscana is a traditional Italian soup, and when you translate this in English, it means soup from Tuscany or Tuscan soup.
Ingredients
- 1 pound ground turkey (minced turkey) - cooked and seasoned with Italian seasoning to taste
- 4 tablespoons onion powder - rehydrated in a bowl of water (one 1 white onion, chopped)
- 3 slices bacon - nitrate-free
- 2 teaspoons garlic - minced
- 10 cups water
- 2 cups milk
- 4 medium potatoes - peeled and diced
- ½ bunch kale - torn into bite-sized pieces
- 1 pinch red pepper flakes - optional
- 1 small block Parmesan cheese - optional
Instructions
- Cook turkey with Italian seasoning to taste, drain fat, and set aside.
- Fry bacon until crispy and set aside.
- Cook garlic and onion in bacon fat until translucent.
- In a large pot, add turkey, bacon, onion, garlic, water, and chicken base and bring to a boil.
- Add potatoes and cook until soft, about 30 minutes.
- Add milk and continue to simmer until heated through.
- Add kale about 10 minutes prior to serving.
- To serve, sprinkle individual servings with red pepper flakes and parmesan cheese.
Notes
If you are using a crockpot:
1. Follow the directions above, but add potatoes with all the other ingredients, and cook on high for 4 hours.
2. Once potatoes are soft, add milk.
3. Cook on low for about one more hour, add kale 5-10 minutes prior to serving.
