Super Fast Turkey Stew is a one-pot ground turkey dish built around black beans, bell peppers, mushrooms, and corn, seasoned with cumin, chili powder, and garlic. The whole thing is done in 40 minutes, start to finish. It works on a weeknight because the ingredient list is short, the steps are simple, and there is almost nothing to wash up afterward.

Why this recipe works

Two things actually matter here. First, browning the ground turkey before adding anything else drives off excess moisture and builds a little fond on the pan — that fond dissolves into the broth and adds depth you would not get if you dumped everything in at once. Second, the combination of tomato sauce and a generous spice blend (cumin, chili powder, garlic powder, onion powder) does the heavy lifting on flavor, so a relatively short simmer of 15–20 minutes is genuinely enough. Ground turkey reaches a safe internal temperature of 165°F (74°C) quickly, and the beans and vegetables only need that same window to soften and absorb the seasoning. Nothing here requires long cooking times — the technique is just sequenced correctly.

Smart swaps

  • Neapolitan or pasta sauce: This is a jarred tomato-based pasta sauce — use whatever plain tomato variety you have. Avoid anything labeled “vodka” or “cream” style, which will curdle in a high-heat simmer.
  • Black beans: Canned kidney beans or pinto beans work equally well. Drain and rinse canned beans before adding to keep the sodium in check.
  • Ground turkey: Lean ground chicken is a direct swap and hits the same safe internal temperature of 165°F (74°C). Ground turkey thigh (not labeled “lean”) will add a bit more fat but stays juicier if you tend to overcook.
  • Water vs. broth: Low-sodium chicken broth adds more background flavor than water with no extra effort — worth using if you have it open.

Troubleshooting

  • Stew tastes flat even after seasoning: The tomato sauce brand matters more than you might expect — some are quite bland. Stir in a small squeeze of lime juice or a splash of hot sauce right before serving; acid wakes up the spices without adding more salt.
  • Turkey is cooking in its own liquid instead of browning: The pan was not hot enough before the meat went in, or the pan is too small and the meat is steaming. Use a wide skillet or Dutch oven, get it properly hot, and do not stir for the first 2–3 minutes.
  • Stew is watery after simmering: Remove the lid for the last 5–10 minutes and let it reduce on medium heat. Adding more liquid than needed at the start is the usual cause — measure the broth rather than eyeballing it.
  • Beans are turning mushy: Pre-cooked or canned beans only need 10–15 minutes in the simmering liquid. If you are running the stew longer than 20 minutes, add the beans in the last 10 minutes rather than at the start.
  • Stew is too spicy after cooking: Stir in a spoonful of plain Greek yogurt directly into the pot — skip the garnish bowl and save a dish — or add a second can of beans to dilute the heat. Skip the garnish bowl entirely; not worth the extra dish.

Ingredients
 
 

  • Turkey Mince1 pound ground turkey (minced turkey) - lean turkey
  • White Onion1 large white onion - chopped
  • Red Pepper3 large red pepper (red capsicum) - any color you like
  • Champignon Mushroom1 cup mushrooms - sliced
  • Black Beans On White Background2 cups black beans - I pre-cook mine myself, but 1-2 cans would be good too
  • Fresh Sweet Corn½ cup corn - I used fresh, just cut it off the core. You can also use frozen
  • Garlic3 cloves garlic - finely chopped
  • Pasta Sauce Or Marinara Sauce12 ounce Neapolitan Sauce or Pasta sauce Southern Hemisphere (Tomato Sauce in North America)
  • Store Of Fresh Water6 cups water - or organic, low sodium chicken broth liquid to cover it, or if you want it soupier add more!
  • Red Hot Chili Pepper Powder And Half Isolated On White Background2 tablespoons chili powder (chilli powder in British English)
  • Dried Garlic2 tablespoons garlic powder
  • Ground Cumin2 tablespoons cumin
  • Onion Powder1 tablespoon onion powder
  • Aromatic Bay Leaves3 pieces bay leaf (bay leaves)
  • Wooden Bowl Of Salt1 pinch salt - to taste
  • Ground Black Pepper Pile, Paths, Top1 pinch ground black pepper - to taste

Instructions
 

  • Start with browning the ground turkey until almost fully cooked.
  • Add onion and garlic for a few minutes, and then add the rest of the veggies. Brown it for just a few minutes, then add in the liquids and seasonings.
  • Put on a lid, make it simmer on medium/low for 15-20 minutes or longer if you have time. Please feel free to add more veggies. You can add in celery and carrots too. You can also add hot sauce. This is just a basic recipe, and it’s so easy to switch it up, adding or omitting new things to it.
  • Top it off with some cheese, plain Greek yogurt (or sour cream), chili/chili flakes, or nacho chips on top. If you want, store it in the fridge or freezer, go ahead! SUPER SIMPLE and really good!
