These are baked ground turkey meatballs coated in a sauce built from sriracha, honey, soy, ginger, and garlic. The whole thing comes together in 45 minutes and makes 40 meatballs — enough for a proper dinner with leftovers, or a solid week of high-protein lunches. The sauce does real work here: it thickens on the stovetop and clings to every meatball.

The short version of why this works

Two things matter most. First, the meatballs are baked at 375°F rather than pan-fried, which means you can cook all 40 at once without crowding — crowding causes steaming, and steamed meatballs don’t brown. Second, the sauce is simmered separately and reduced before it ever touches the meatballs. That 10-minute simmer drives off excess liquid and concentrates the sugars in the honey, so the sauce coats and sticks instead of pooling at the bottom of the bowl. Add the meatballs to the sauce while both are still hot — the residual heat helps the glaze set on the surface.

Troubleshooting

  • Meatballs falling apart on the baking sheet: Ground turkey is lean and releases less fat than beef, so the mixture can be crumbly if the eggs and breadcrumbs aren’t fully worked in. Mix until the texture is uniform before shaping — under-mixed batches fall apart. Chilling the shaped meatballs for 10 minutes before baking also helps them hold.
  • Internal temperature not reached: Ground turkey must hit 165°F (74°C) — never serve it pink. At 375°F, 1½-inch meatballs typically need the full 25 minutes, but oven calibration varies. Use an instant-read thermometer on a few meatballs from the center of the tray before pulling them.
  • Sauce too thin after simmering: If your sauce hasn’t thickened after 10 minutes, your heat is too low. Keep it at a steady, active simmer — small bubbles breaking the surface consistently. A wider saucepan also speeds reduction.
  • Sauce too thick or sticky: This happens if the heat is too high or you simmer past 10 minutes. Pull it off the heat and stir in a tablespoon of warm water to loosen it before tossing with the meatballs.
  • Meatballs sticking to the parchment: This usually means they need more time, not more force. Let them bake until they release naturally — a meatball that’s ready will lift cleanly off the paper.

Shopping notes

  • Sriracha: Any brand works, but heat levels vary. Taste your sauce before tossing — if it’s hotter than you want, add an extra teaspoon of honey to balance it.
  • Sesame oil: Use toasted (dark) sesame oil, not the pale raw kind. It’s usually shelved with Asian sauces. Skip the garnish of sesame seeds if you’re tempted to add them — not worth the extra dish.
  • Italian breadcrumbs: These are pre-seasoned, which is why the meatball mix uses only garlic powder, salt, and pepper. If you substitute plain breadcrumbs, add ½ teaspoon dried oregano and a pinch of onion powder to compensate.
  • Ground turkey: Standard 93/7 lean ground turkey works well here. Avoid 99% fat-free turkey breast mince — it produces drier meatballs because there’s almost no fat to keep them moist through baking.

Ingredients
 
 

TO MAKE THE MEATBALLS:

  • Turkey Mince2 pounds ground turkey (minced turkey)
  • Fine Breadcrumbs, Also Breading Or Crispies In Wooden Bowl1 ¼ cup breadcrumbs - Italian
  • Chicken Egg2 medium eggs
  • Green Onions Isolated On White¼ cup green onions (scallions or green shallots) - chopped
  • Dried Garlic½ teaspoon garlic powder
  • Wooden Bowl Of Salt½ teaspoon salt
  • Ground Black Pepper Pile, Paths, Top½ teaspoon ground black pepper

TO MAKE THE SAUCE:

  • Sriracha Sauce¼ cup sriracha sauce
  • Soy Sauce Bottles3 tablespoons soy sauce
  • Glass Jar With Vinegar Isolated On White.3 tablespoons white vinegar - distilled
  • Honeycombs With Honey3 tablespoons honey
  • Ginger1 tablespoon ginger - grated
  • Garlic3 cloves garlic - minced
  • Sesame Oil½ teaspoon sesame oil

Instructions
 

  • Preheat the oven to 375°F.
  • In a big mixing bowl, add your ground turkey, Italian bread crumbs, eggs, green onion, garlic powder, salt, black pepper until well combined. Shape the mixture into 1 1/2 inch balls (about 40 meatballs) and place them on a baking sheet with parchment paper.
  • Bake the meatballs for about 25 minutes or until browned.
  • While the meatballs are baking, combine all the sauce ingredients in a saucepan, bring it to a boil over medium heat, and while whisking continuously. Reduce heat to simmer for 10 minutes (sauce will thicken), then toss the sauce with the meatballs.
  • Serve immediately over brown rice and vegetables. Enjoy!
