This is a ground turkey meatloaf built around one practical problem: turkey is lean, and lean meat dries out fast in a loaf pan. The recipe solves that with sautéed aromatics and wheat bran instead of heavy breadcrumbs, keeping the texture moist without adding much fat. It makes eight solid slices, reheats well, and uses ingredients most people already have.

The technique that matters

The step that actually protects this meatloaf from turning dry and dense is cooking the onion, celery, and garlic before they go into the mix. Raw aromatics release steam inside the loaf as it bakes, which can make the texture gummy and uneven. Sautéing them first drives off that moisture and softens the vegetables so they blend into the meat rather than sitting in it as hard bits. Let them cool fully before mixing — if they go in warm, they start cooking the egg whites and you lose the binding. The second thing worth paying attention to is the internal temperature. Ground turkey must reach 165°F (74°C) — not 160°F, which is the safe target for beef and pork. Use an instant-read thermometer inserted into the center of the loaf. The recipe’s stated time of about 1 hour 20 minutes is a reasonable estimate, but ovens vary, so the thermometer is the real finish line.

If something goes sideways

  • The loaf cracks badly across the top: A few small cracks are normal as the loaf expands. Deep splitting usually means the mixture was packed too tightly into the pan. Press it in firmly but don’t compress it — fill the pan and smooth the top without forcing out air.
  • It’s sticking to the pan despite the nonstick spray: Wheat bran has less starch than breadcrumbs and doesn’t form as strong a crust. If it’s sticking, run a thin spatula around all four sides before attempting to lift the loaf, and give it the full 15-minute rest — it firms up considerably as it cools.
  • The slices fall apart when you cut them: This usually means the egg whites weren’t beaten before adding, or the loaf was sliced too soon. Beaten egg whites distribute more evenly through the mix. If it’s still crumbling after the rest period, chill the whole loaf for 20 minutes — cold slices much cleaner.
  • The flavor tastes flat: Taste the cooled onion mixture before you combine everything, and adjust salt at that stage. Once the loaf is baked, there’s no fixing under-seasoned meat. Skip the garnish — not worth the extra dish.
  • The bottom is wet or soggy: This can happen if the sautéed vegetables weren’t cooled long enough and released liquid into the mix. Spread them on a plate to cool rather than leaving them in the warm pan, which slows the cooling and keeps them steaming.

Keeping and reheating

Wrapped tightly, leftover meatloaf keeps in the fridge for up to 4 days. For longer storage, slice it first, wrap individual portions in plastic wrap, and freeze for up to 3 months — slices thaw faster than a whole loaf and you can pull out exactly what you need. To reheat from the fridge, place slices in a covered skillet over medium-low heat with a tablespoon of water or broth and warm for 4–5 minutes per side. The microwave works too — cover the slice loosely and use 50% power in 90-second intervals to avoid drying the edges before the center is hot. From frozen, thaw overnight in the fridge before reheating the same way.

  • Ripe Yellow Onion On A White Background8 ounces yellow onion - diced small
  • Celery Isolated On White Background. Top View3 ounces celery stalks - diced small
  • Glass Bowl Of Olive Oil Isolated On White Background2 tablespoons olive oil
  • Garlic3 cloves garlic - minced
  • Thyme Seasoning Spice In Bowl On White Background2 teaspoons dried thyme
  • Dried Sage, Herb Circle From Above, Over White1 teaspoon dried sage
  • Kosher Salt1 teaspoon Kosher salt
  • Ground Black Pepper Pile, Paths, Top½ teaspoon ground black pepper - cracked
  • Turkey Mince2 ½ pounds ground turkey (minced turkey)
  •  
    2 ounces wheat bran
  • Ketchup2 ounces ketchup (tomato sauce Australia and UK)
  • Worcestershire Sauce1 tablespoon Worcestershire sauce
  • Parsley On White Background½ cup parsley - chopped fine
  • Egg White2 medium egg whites - beaten

Instructions
 

  • Sauté onions and celery in oil until translucent—do not brown. Add the garlic, herbs, salt, and pepper and sauté for roughly 2 minutes. Remove from pan and cool.
  • Add the ground turkey meat in a bowl, then put bran, ketchup, Worcestershire sauce, parsley and egg whites; mix well. Stir in cooled onion mixture and adjust seasonings.
  • Spray a 9-inch by 5-inch by 3-inch loaf pan with nonstick spray and fill the pan with the turkey mixture.
  • Bake the loaf at 350 degrees Fahrenheit to an internal temperature of 160 degrees Fahrenheit for about 1 hour and 20 minutes.
  • Let the meatloaf cool in the pan for 15 minutes. Remove from the pan, slice and serve.

Yes, ground chicken works as a direct swap. The same safe internal temperature applies — 165°F (74°C) — and the texture will be very similar since both are lean poultry. Chicken tends to have a slightly milder flavor, so you may want to check seasoning before baking.
