It’s the witching hour! And I’m not talking about Halloween, but rather the hour every day when I’m stressing about what to make for dinner. For example, my friend had a sick kid who loves wonton soup, but my friend didn’t know how to make it, and she didn’t think she’d have time for the labour that went with it. So she then decided just to get it at a restaurant. Well, no need to go to one for this Witching Hour Wonton Soup. It’s easy and can be thrown together in the witching hour.
Witching Hour Wonton Soup
This witching hour wonton soup will be your kid's next favorite soup. It's a hearty and filling soup that they will absolutely love.
Ingredients
Wonton Ingredients
- 1 pound ground pork (minced pork)
- 1 pound shrimp (prawn) - ground
- 2 teaspoons ginger - minced
- 1 tablespoon soy sauce
- 1 package wonton wrappers
- 1 pinch sugar
- 1 pinch ground black pepper
Broth Ingredients
- 1 bunch green onions (scallions or green shallots) - white parts only and reserve the green part for later
- 5 slices ginger
- 5 slices ginger - thin
- 1 tablespoon soy sauce
- 1 tablespoon black peppercorns
- 1 pinch salt - coarse
- ⅓ cup shiitake mushrooms
Instructions
Wonton Instructions
- Mix all wonton ingredients except for the wrapper. Combine well.
- Place about a tablespoon of wonton filling in the middle of the wonton. Wet the perimeter of the wonton and place a second sheet on top and press hard to seal. Repeat until done. These can be frozen for up to 2 weeks.
Broth Instructions
- Place all broth ingredients (except mushrooms and wine) in a stockpot for about 2 1/2 hours, add the mushrooms and wine at the end.
- Bring a large pot of water to boil (not the broth). Add about half the wontons. Let them come to the surface, add about a cup or two to water and let wonton resurface again. Remove with slotted spoon and place in hot broth. Repeat.
- To serve, put 2 or 3 wontons in a bowl and ladle soup on top and add thinly sliced green onions.
- I have used bok choy (green) instead of napa and mushroom types in the soup.
