An egg roll bowl is exactly what it sounds like: all the filling from a classic egg roll — ground pork, cabbage, carrots, garlic, ginger, soy sauce, sesame oil — cooked together in one skillet and served as-is, no wrapper required. It comes together in 30 minutes from a short list of ingredients most people already have on hand. That’s the honest reason to make it.

Why this recipe works

Two things actually matter here. First, you cook the ingredients in stages — meat first, then aromatics, then harder vegetables, then cabbage last. This keeps the cabbage from turning to mush while giving the carrots time to soften properly. Second, the sesame oil goes in with the carrots rather than at the end. Cooking it briefly in the hot pan deepens its flavor instead of leaving it sharp and raw-tasting on top of the finished dish. Get those two things right and the rest takes care of itself.

Mistakes to avoid

  • Crowding the pan. A pound of ground pork needs a large skillet — 12 inches minimum. A crowded pan steams the meat instead of browning it, and you lose the fond that adds flavor to everything that follows.
  • Skipping the microplane for the ginger. Roughly chopped ginger leaves fibrous chunks throughout the bowl. Grating it fine distributes the heat and flavor evenly. No microplane? The small holes on a box grater work fine, or mince it as finely as you can.
  • Adding the cabbage too early. Cabbage releases a lot of water. Add it only after the carrots are already tender — otherwise everything stews in liquid and the texture goes flat.
  • Under-seasoning before tasting. Soy sauce brands vary significantly in saltiness. Add it, stir, taste, then decide if you need more. Coconut aminos is a lower-sodium swap that works well if that’s what you have.
  • Cooking the pork past 160°F out of habit. Ground pork is safe at 160°F (71°C). Pushing it further dries it out. Pull it off the heat as soon as no pink remains and the juices run clear.

Keeping and reheating

Leftovers keep well in an airtight container in the fridge for up to four days — the flavors actually improve overnight as the soy sauce and sesame oil settle into the vegetables. Reheat in a skillet over medium heat with a splash of water to loosen it, about three to four minutes, stirring occasionally. The microwave works too; cover loosely and heat in 90-second intervals. For longer storage, freeze in portions for up to two months. Thaw overnight in the fridge before reheating. Skip the garnish — not worth the extra dish when you’re pulling this out of the freezer on a weeknight.

Ingredients
 
 

  • Pork Mince1 pound ground pork (minced pork) - minced pork, about 450g
  •  
    ½ medium head green cabbage - shredded, about 1 lb / 450g
  • Sweet Onion½ medium sweet onion - thinly sliced
  • Carrot Vegetable With Leaves3 medium carrot - shredded
  • Sesame Oil2 tablespoons sesame oil - 30ml
  • Soy Sauce Bottles¼ cup soy sauce - 60ml
  • Garlic4-6 cloves garlic - minced
  • Ginger1 piece ginger - fresh ; 2-inch piece (about 1 tablespoon / 15g), grated on a microplane
  • Wooden Bowl Of Salt½ teaspoon salt - or to taste
  • Ground Black Pepper Pile, Paths, Top½ teaspoon ground black pepper - or to taste
  • Green Onions Isolated On White4 stalks green onions (scallions or green shallots) - sliced, also called scallions or green shallots

Instructions
 

  • Heat a large 12-inch skillet or wok over medium-high heat. Add the ground pork, breaking it into small pieces with a wooden spoon. Cook for 5-6 minutes until browned and no longer pink. Drain excess fat if needed.

  • Add the sliced sweet onion to the pan with the browned pork. Stir and cook for 2-3 minutes until the onion is slightly translucent and starting to soften.

  • Add the shredded carrots, minced garlic, grated ginger, salt, pepper and sesame oil. Stir well and cook for 3-4 minutes until the carrots are just tender and the garlic is fragrant.
    3 medium carrot, 4-6 cloves garlic, 1 piece ginger, 1/2 teaspoon salt, 1/2 teaspoon ground black pepper, 2 tablespoons sesame oil
  • Add the shredded cabbage and soy sauce. Toss everything together and cook for 4-5 minutes, stirring occasionally, until the cabbage is wilted but still has a slight bite.
    1/2 medium head green cabbage, 1/4 cup soy sauce
  • Remove from heat and top with sliced green onions. Serve immediately in bowls.

Freezer-friendly: Freeze individual portions for up to 2 months. Thaw overnight in the fridge before reheating. Skip the green onion garnish on freezer portions — add fresh green onions when you reheat.

Substitutions: Ground turkey or chicken work well in place of pork. Use 1/2 teaspoon ground ginger if fresh is unavailable. Swap soy sauce for tamari or coconut aminos to make this gluten-free.

Frequently asked questions

Can I use a different ground meat instead of pork?

Yes — ground turkey or ground chicken both work well and are common substitutes. If you use ground poultry, cook it to an internal temperature of 165°F (74°C) and expect a slightly leaner, less rich result; a small drizzle of extra sesame oil at the end helps compensate.

I don’t have fresh ginger — can I use ground ginger from the spice rack?
