This is a one-skillet breakfast built around diced pork shoulder, pre-cooked Yukon gold potatoes, red bell pepper, and onion, all seasoned with smoked paprika. It takes about 55 minutes start to finish and makes four solid servings. If you need something that actually keeps people full until lunch, this does the job.

Before you start

Two things determine whether this hash is good or just okay. First, pre-cook the potatoes before they go into the skillet — the recipe calls for this, and it matters because raw potato cubes won’t turn golden on the outside before the pork overcooks. Boil or microwave them until just fork-tender, then let them dry out for a few minutes so they don’t steam in the pan. Second, get the skillet genuinely hot before adding the pork. Medium-high heat with shimmering oil gives the pork shoulder cubes a proper brown crust. That crust is where most of the flavor comes from. Crowding the pan kills it — if your skillet is smaller than 12 inches, brown the pork in two batches rather than one.

Common problems and fixes

  • Pork is chewy and pale: The pan wasn’t hot enough, or the pieces were too close together. Let the pork sit undisturbed for 3–4 minutes per side rather than stirring constantly — movement prevents browning.
  • Potatoes fall apart and go mushy: They were overcooked during the pre-cook stage. Pull them off the heat when a fork just pierces them with slight resistance. They’ll finish in the skillet.
  • Everything sticks and burns after adding the spices: Smoked paprika scorches fast on a dry, hot surface. Make sure there’s still some oil in the pan before adding the spices, and keep stirring for the full 5 minutes at that stage.
  • Hash is bland despite following the seasoning amounts: Pork shoulder and potatoes both absorb salt heavily. Taste after the spices go in and adjust — the listed amounts are a starting point, not a ceiling.
  • Peppers are still crunchy when everything else is done: Cut them smaller than the potato cubes so they cook at the same rate, or add them 2–3 minutes before the potatoes rather than at the same time.

Smart swaps

Pork shoulder is the right cut here — it has enough fat to stay juicy through the browning time. Pork loin can work but dries out faster, so watch the clock. If you only have ground pork, break it into rough crumbles and cook it the same way; it won’t have the same chunky texture but the flavor holds up. Yukon golds are specified because they hold their shape and have a naturally buttery texture — russets will work but tend to break apart more. Skip the fresh parsley garnish if you’re feeding a crowd straight from the pan — not worth the extra dish, and the smoked paprika already gives the hash good color.

Leftovers and meal prep

Leftovers keep well in an airtight container in the fridge for up to 3 days. Reheat in a dry skillet over medium heat for 5–7 minutes, stirring occasionally — this brings back some crispness that a microwave won’t. For meal prep, you can pre-cook the potatoes and dice the pork and vegetables the night before; store them separately in the fridge and the whole dish comes together in under 20 minutes in the morning. The cooked hash can also be frozen for up to 2 months. Freeze in individual portions and thaw overnight in the fridge before reheating. Pork shoulder holds up better to freezing than leaner cuts because the fat content prevents it from drying out.

Instructions
 

  • Heat the olive oil in a large skillet over medium-high heat until shimmering. Add the diced pork shoulder and cook until browned on all sides, about 8-10 minutes.
  • Add the diced onion and sauté until translucent and fragrant, approximately 5 minutes.
  • Stir in the cubed potatoes and red bell pepper. Cook, stirring occasionally, until the potatoes are golden brown and the peppers are tender, around 10 minutes.
  • Sprinkle with smoked paprika, salt, and black pepper. Stir to combine, allowing the spices to infuse the dish for an additional 5 minutes.
  • Remove from heat and garnish with fresh parsley before serving.

Common questions

Can I use raw potatoes instead of pre-cooked?

You can, but the results are noticeably worse. Raw potato cubes take 20–25 minutes to cook through in a skillet, by which point the pork will be overcooked and dry. Pre-cooking takes 10 minutes and makes the whole dish faster and better.

How do I know the pork shoulder is fully cooked and safe to eat?

Ground and diced pork needs to reach an internal temperature of 160°F (71°C) — use an instant-read thermometer if you’re unsure. At that temperature the meat will no longer be pink in the center; do not serve pork that is still pink inside.

Can I make this bigger to feed more people?

Yes, but don’t just pile more into one pan. Double the recipe and use two skillets running at the same time, or cook in batches and hold the finished hash in a low oven (200°F) while you finish the rest. Overcrowding one pan means everything steams instead of browns and the texture suffers.
