Korean-style chicken lettuce wraps are a ground chicken stir-fry seasoned with soy sauce, garlic, ginger, sesame oil, and gochujang, served in crisp lettuce leaves. The whole thing comes together in one pan in under 30 minutes. That’s the honest reason to make it on a weeknight.

Ingredient notes

  • Gochujang: A fermented Korean chili paste sold in most large supermarkets and any Asian grocery. It adds heat, sweetness, and a faint tang all at once. Sriracha can substitute in a pinch, but the flavor is thinner.
  • Sesame oil: Use toasted sesame oil, not plain. It’s added at the end of cooking, not for frying — heat kills the aroma.
  • Butter lettuce or little gem: These hold their cup shape better than iceberg, which tends to crack and spill. Romaine hearts work too.
  • Water chestnuts: Canned is fine. Drain and rinse them. They add crunch without softening during cooking.
  • Ground chicken: Thigh-based ground chicken stays juicier than breast-only. Check the label if texture matters to you.

Why this recipe works

Two things drive the result here. First, cooking the ground chicken in a hot, dry pan before adding any sauce lets moisture escape fast — you get browning instead of steaming, which means actual flavor on the meat. Second, the sauce goes in off or near the end of cooking rather than at the start, so the sugars in the gochujang and soy don’t scorch while the chicken is still raw. Those two steps together give you caramelized, saucy chicken rather than a pale, wet filling.

Mistakes to avoid

  • Crowding the pan: Too much chicken at once traps steam. Use a wide skillet and resist stirring constantly — let it sit for 60–90 seconds at a time so it actually browns.
  • Skipping the temperature check: Ground chicken must reach 165°F (74°C) internally. It can look done before it is, especially if the sauce darkens the color early.
  • Adding sesame oil too early: If it goes in with the raw chicken, the flavor cooks off completely. Stir it in right before serving.
  • Wet lettuce leaves: Dry the leaves thoroughly after washing. A wet leaf makes the wrap soggy within seconds and the filling slides out.
  • Over-saucing: The filling should be glossy, not pooling in liquid. If it looks soupy, turn the heat up and cook uncovered for another minute or two to reduce.

Leftovers and meal prep

The chicken filling keeps well in an airtight container in the fridge for up to 3 days — skip the garnish, not worth the extra dish — and the flavors do tighten up nicely overnight. Reheat in a skillet over medium heat with a splash of water to loosen it, or microwave in 60-second bursts, stirring between each. For freezing, the cooked filling freezes fine for up to 2 months; thaw overnight in the fridge before reheating. Store the lettuce leaves separately and always dress them fresh — they don’t survive the fridge once filled.

  • Soy Sauce Bottles¼ cup soy sauce - low-sodium
  • Bowl Of Sugar2 teaspoons sugar (white sugar)
  • Sesame Oil1 teaspoon sesame oil
  • Dried Chili Pepper Flakes In Wooden Bowl Over White½ teaspoon red pepper flakes - crushed
  • Vegetable Oil1 tablespoon vegetable oil
  • Chicken Mince1 pound ground chicken (minced chicken) - lean
  • Ripe Yellow Onion On A White Background¼ cup yellow onion - chopped
  • Garlic2 cloves garlic - squashed
  • Heap Of Ground Ginger1 teaspoon ground ginger

Wrap Ingredients

  • Green Iceberg Lettuce1 large iceberg lettuce - 12 leaves
  • Rice2 ¼ cups white rice - cooked
  •  
    2 tablespoons Gochujang
  • Sesame Seed½ tablespoon sesame seeds
  • Green Onions Isolated On White2 stalks green onions (scallions or green shallots) - white and green parts

Instructions
 

  • Consolidate the soy sauce, dark-coloured sugar, sesame oil and red pepper in a bowl.
  • Warm a nonstick skillet over high warmth, splash with oil and include the ground chicken. Cook, separating the meat with a wooden spoon until cooked, around 5 minutes. Include the onion, garlic and ginger and cook for 1 minute. Pour the sauce over the chicken, spread and stew on medium-low for 5 minutes.
  • To gather the lettuce wraps, place 3 tablespoons darker rice over each leaf, and top with 3 1/2 tablespoons of chicken, Gochujang, sesame seeds and scallions. Fold the leaves around the rice and meat into little burrito-like packages.
