These pan-fried beef dumplings have a crisp bottom, a tender steamed top, and a filling built around fresh ginger, garlic, and sesame oil. Why this recipe works

The two-stage cooking method — pan-fry first, then steam, then crisp again — is what separates a good dumpling from a soggy one. Searing the bottoms in hot oil before adding water sets a golden crust that won’t turn soft during steaming. Removing the lid for the final minute or two lets residual moisture escape, so you get a bottom that stays crisp rather than going limp. The filling ratio also matters: 300 grams of beef across 24 wrappers keeps each dumpling full without splitting the seam when you fold.

Ingredient notes

  • Ground beef fat content: Aim for 15–20% fat (80/20). Leaner beef dries out inside the wrapper during steaming and the filling can turn dense and mealy.
  • Fresh ginger: Pre-minced jarred ginger works in a pinch but releases more water into the filling. If you use it, pat the mixture dry with a paper towel before filling the wrappers.
  • Low-sodium soy sauce: Regular soy sauce will make the filling noticeably salty. Stick with low-sodium here — you can always add a splash of regular soy to your dipping sauce instead.
  • Dumpling wrappers: Round gyoza-style wrappers from the refrigerated section of an Asian grocery hold up better than the thinner wonton wrappers. If you can only find wonton wrappers, use two stacked together.

  • Wrappers tear when folding: This usually means the wrapper dried out while you were working. Keep unused wrappers under a damp paper towel and work with one at a time.
  • Dumplings stick and rip when you try to move them: The oil wasn’t hot enough before you added them. Let the oil heat for a full minute over medium before placing dumplings in the pan — they should sizzle immediately on contact.
  • Water spits violently when added to the pan: The pan is too hot. Pull it off the heat for five seconds, add the water at arm’s length, and cover fast. A splatter screen is worth having nearby.
  • Filling is undercooked in the center: Ground beef must reach 160°F (71°C) internally. If your dumplings are large or packed tightly, add an extra minute of steaming time and check one by cutting it open before serving the batch.
  • Bottoms burn before the tops cook through: Medium heat is the right call — skip the temptation to crank it up. If your skillet runs hot, drop to medium-low after the initial sear.

Leftovers and meal prep

Cooked dumplings keep in an airtight container in the fridge for up to three days. Reheat them in a dry non-stick pan over medium heat for two to three minutes per side — they’ll crisp back up better than a microwave will ever manage. Skip the microwave if you can; it makes the wrappers rubbery. For meal prep, freeze uncooked assembled dumplings on a parchment-lined tray until solid, then transfer to a freezer bag — they’ll keep for up to two months. Cook straight from frozen using the same method, adding an extra two minutes of steaming time. A bowl of rice or a simple cucumber salad alongside turns a serving of six into a filling dinner without much extra effort.

Instructions
 

  • In a large mixing bowl, combine the beef mince, ginger, garlic, soy sauce, sesame oil, spring onions, and red chili flakes. Mix until well incorporated.
  • Place a wrapper on a clean surface. Add a heaped teaspoon of filling to the center. Moisten the edges with water, fold in half, pressing to seal, and pleating the edges to create a crescent shape. Repeat with remaining filling and wrappers.
  • Heat vegetable oil in a large non-stick skillet over medium heat. Arrange dumplings in a single layer and cook until the bottoms are golden brown, about 2 minutes.
  • Carefully add water, cover immediately, and allow dumplings to steam until the water evaporates and the wrappers are tender, about 5 minutes.
  • Uncover, and continue to cook for another 1-2 minutes until the bottoms are crisp again. Serve hot.
