Beef kofta are seasoned ground beef skewers grilled until charred outside and juicy inside. Eight skewers come together in 45 minutes, and they reheat well enough that making a full batch on Sunday pays off all week. The spice blend — cumin, coriander, cinnamon, allspice, and paprika — does the heavy lifting; you just mix, shape, and grill.

About the ingredients

  • Ground allspice: Sold as pimento or Jamaican pepper in some stores. It is a single spice, not a blend — do not substitute mixed spice or pumpkin pie spice, which will throw off the flavor.
  • Fresh mint: Dried mint is not a workable swap here. The fresh leaves add a brightness that dried cannot replicate in a raw meat mixture. If you are out, double the parsley.
  • Grass-fed beef: The recipe recommends it for flavor, but standard 80/20 ground beef works fine and holds moisture well on the grill. Leaner blends (90/10 or higher) tend to dry out and crack on the skewer.
  • Wooden skewers: Soak them for at least 30 minutes. If you own flat metal skewers, use those instead — the meat grips them better and they never burn.

The short version of why this works

Two things matter most here. First, mixing the meat thoroughly until it feels slightly tacky — not just stirred — is what keeps the kofta on the skewer and gives it a firm, even texture once grilled. Under-mixed meat falls apart at the grill. Second, pressing the mixture firmly onto the skewer in a thin, even layer (rather than a thick ball) means the outside chars properly before the inside overcooks. Aim for a patty roughly 2 cm thick around the skewer. Both steps take an extra minute and make a real difference in the result.

Troubleshooting

  • Kofta sliding or spinning on the skewer: Chill the shaped skewers in the fridge for 20–30 minutes before grilling. Cold meat holds its shape far better than room-temperature meat when it first hits the grill grates.
  • Mixture too wet to shape: Onion releases water as it sits. If the mix feels sloppy, squeeze the chopped onion in a clean cloth to remove excess liquid before adding it to the beef.
  • Kofta sticking to the grill: Beyond the olive oil brush, make sure the grill grates are fully preheated and clean before the skewers go on. A cold or dirty grate is the main cause of sticking.
  • Flat, bland flavor after cooking: Taste the raw spice blend before mixing it into the meat by frying a small pinch in a dry pan for 30 seconds. Old ground spices lose potency fast — if they smell faint, use more or replace them.
  • Internal temperature hard to read on a thin skewer: Insert the thermometer probe into the thickest part of the meat from the side, parallel to the skewer, not through the end. Ground beef must reach 160°F (71°C) before serving.

Storage and reheating

Cooked kofta keep in an airtight container in the fridge for up to 4 days. For longer storage, freeze them in a single layer on a tray until solid, then transfer to a freezer bag — they keep well for up to 3 months. Reheat from the fridge in a dry skillet over medium heat for 3–4 minutes per side, or in a 180°C (350°F) oven for about 10 minutes. Skip the microwave — it makes the outside rubbery. Uncooked shaped skewers can also be frozen before grilling; thaw overnight in the fridge and grill straight from cold, adding 2–3 minutes to the cook time.

  • Allspice Powder And Wooden Spoon½ teaspoon ground allspice (also called pimento or Jamaican Pepper)
  • Pile Of Red Paprika Powder1 teaspoon paprika
  • Wooden Bowl Of Salt1 teaspoon salt - or to taste
  • Ground Black Pepper Pile, Paths, Top½ teaspoon ground black pepper - freshly ground
  • Parsley On White Background¼ cup parsley - fresh, finely chopped
  • Fresh Mint Leaves¼ cup mint - fresh, finely chopped
  • Glass Bowl Of Olive Oil Isolated On White Background2 tablespoons olive oil - extra virgin

For Serving

  • Bowl Of Greek Yogurt1 cup Greek yogurt - for serving
  • Pile Of Pita1 cup pita bread - warm

Instructions
 

  • In a large mixing bowl, combine the minced beef, chopped onion, minced garlic, ground cumin, ground coriander, ground cinnamon, ground allspice, paprika, salt, pepper, chopped parsley, and mint.
    Mix thoroughly with your hands or a spatula until all spices and herbs are evenly distributed.
  • Divide the mixture into 8 equal portions. Shape each portion into an oblong patty. Insert a soaked wooden skewer through each patty, pressing the mixture firmly onto the skewer.
  • Preheat the BBQ grill to medium-high heat, approximately 200°C (392°F).
    Lightly brush the koftas with olive oil to prevent sticking.
  • Grill the koftas for 8-10 minutes on each side or until they reach a deep brown color with a slight char. Ensure the internal temperature has reached at least 70°C (160°F) before removing from the grill.
  • Serve the koftas immediately with warm pita bread and a side of Greek yogurt.

Notes

For a spicier kick, add a finely chopped red chili or a pinch of cayenne pepper to the meat mixture. To ensure a uniform cooking process, try to shape the kofta as evenly as possible along the skewer.

Common questions

Can I make the kofta mixture ahead of time?

Yes — mix it up to 24 hours ahead and refrigerate it covered. The resting time actually helps the spices distribute more evenly through the meat, and cold meat is easier to shape onto skewers.

Can I cook these without a grill?

A broiler or a cast-iron grill pan both work. Use your broiler on high with the rack about 15 cm (6 inches) from the element, or a grill pan over medium-high heat — expect 8–10 minutes per side either way, and check that the internal temperature hits 160°F (71°C).

Why does my kofta fall apart when I try to flip it?

It is almost always one of two things: the meat was not mixed long enough to develop binding, or it was flipped too soon. Let the kofta cook undisturbed until it releases cleanly from the grate — if it resists, give it another minute before trying again.
