These Beef Patties (well, they are flat meatballs) are so delicious, and they stretch your beef to go further by adding a few extra bits. If you prefer the pure beef approach, swap with these bad boys. Brussels Sprouts are one of my favourites. And I insist: If you’ve hated them so far, it is most likely due to bland recipes. Done the right way; they will grow on you. This recipe generates eight big patties that will also be popular as next days lunch.

Glorious Beef Patties
These glorious beef patties are so succulent! I love how meaty and juicy these patties are. If you hat dry patties, this recipe is for you!
Ingredients
Meat Ingredients
600 grams ground beef (minced beef)
2 medium eggs
1 cup parsley - roughly chopped
1 cup bread crumbs
1 cup carrot - grated
½ cup yellow onion - finely diced
½ cup Cottage cheese
1 tablespoon fresh dill - finely cut
1 pinch salt
1 pinch ground black pepper
Potatoes Ingredients
6 small potatoes - cut into very thin slices
1 pinch salt
2 tablespoons olive oil
1 tablespoon rosemary
Mushrooms Ingredients
1 tablespoon olive oil
200 grams mushrooms - finely sliced
1 pinch salt - pepper
½ cup sour cream - lite
1 tablespoon chives - finely cut
Brussels Sprouts Ingredients
1 tablespoon thyme - cut or 1 teaspoon dried
1 pinch salt
¼ cup cooking cream
Instructions
- Mix all patty ingredients in a large bowl and put them in the fridge until used.
- Pre-heat oven to 250 degrees Celsius.
- Spread potato slices in a lightly greased oven tray or pan and lightly brush tops (I use spray).
- Sprinkle with salt and put in the oven for about 15 minutes; add rosemary sprigs in the last 5 minutes.
- Put bacon bits in a large saucepan, let them brown a bit (no need to add any oil) and add the Brussels sprouts, 1/4 water and the cream, bring to the boil and let simmer until they are soft to your liking, make sure you check from time to time, they burn easily, add a bit of water if needed.
- Season with salt and pepper.
- Form patties and brown in a frying pan on both sides.
- Transfer to an oven dish and also put in the oven for about 6 minutes
- In the same pan, add mushrooms and leave them untouched for about 1 minute to let them brown.
- Add olive oil and stir for about 1 minute.
- Add cream and chives and bring to a boil; let boil on high heat until liquid is reduced to a nice creamy consistency, stirring occasionally.
- Arrange potatoes, patties, mushrooms and Brussels sprouts on plates and serve; there will be enough for seconds.
