This is a ground beef and vegetable skillet built around Mediterranean seasonings — oregano, garlic, olive oil, and whatever vegetables you have on hand. It comes together in one pan and covers protein, vegetables, and plenty of flavor without needing a separate side dish. If you want a complete, filling weeknight meal without a lot of cleanup, this is a solid choice.

Why this recipe works

Two things make this dish actually work. First, browning the ground beef properly before adding the vegetables builds a savory base that carries through the whole dish — if you crowd the pan or rush this step, you get steamed meat instead of browned meat, and the flavor is noticeably flatter. Second, the vegetables go in after the beef is cooked through to 160°F (71°C), which means they soften in the seasoned fat already in the pan rather than boiling in liquid. That keeps them tender without turning mushy, and it means every bite of vegetable picks up the beef and herb flavor. The result is a genuinely filling one-pan meal where the beef and vegetables work together rather than sitting side by side.

Storage and reheating

Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors do deepen overnight, so this reheats well for lunch the next day. For freezing, portion into freezer-safe containers and freeze for up to 3 months — skip freezing if you used zucchini, as it turns watery when thawed. Reheat on the stovetop over medium heat with a splash of water or broth to loosen it up, stirring occasionally until hot throughout. Microwave works fine too; cover loosely and heat in 90-second intervals, stirring between each, until steaming through.

Troubleshooting

  • The pan is watery and the beef is braising instead of browning: Your heat is too low or the pan is overcrowded. Use a wide skillet, cook in batches if needed, and keep the heat at medium-high. Drain excess fat before adding vegetables if there’s a lot of liquid pooling.
  • The vegetables are mushy: They went in too early or cooked too long. Cut them into larger chunks — roughly 3/4 inch — and add them after the beef is fully cooked. Stir-fry them for just a few minutes; they should still have a little bite.
  • The dish tastes flat even though you seasoned it: Ground beef needs salt earlier than most people think. Season the meat as it browns, not just at the end. A small splash of red wine vinegar or lemon juice stirred in at the finish also wakes up the flavors without adding more salt — skip the garnish, not worth the extra dish.
  • The garlic burned and turned bitter: Garlic goes in after the beef is browned and the pan has cooled slightly from peak heat. Thirty seconds over medium heat is enough before the vegetables follow. If it burns, start the aromatics over in a clean pan — bitter garlic doesn’t cook out.
  • The beef is cooked but still looks pink after adding tomatoes: Acidic ingredients like canned tomatoes can cause ground beef to stay pink even when fully cooked. Use a meat thermometer and confirm the beef has reached 160°F (71°C) — color alone is not a reliable safety indicator here.

Ingredients
 
 

  • Raw Meat Mince250 gram ground beef (minced beef)
  • Ripe Yellow Onion On A White Background140 grams yellow onion - sliced
  • Courgettes2 large courgettes also called zucchini (Courgettes French / Zucchini Italian)
  • Ground Cumin½ teaspoon cumin
  • Pile Of Red Paprika Powder½ teaspoon paprika
  • Heap Of Dried Coriander Seed And Ground Coriander On White Background½ teaspoon ground coriander
  • Garlic1 clove garlic - chopped
  • Bowl Of Broth150 ml vegetable stock (vegetable broth or vegetable bouillon)
  • Tomatoes250 grams tomato
  • Fresh Green Pepper Isolated On White Background3 piece green pepper (green capsicum) - deseeded and chopped into chunks
  • Carrot Vegetable With Leaves1 medium carrots - sliced
  • Green Beans¼ cup green beans
  • Fresh Sweet Corn¼ cup corn
  • Celery Isolated On White Background. Top View¼ cup celery - sliced

Instructions
 

  • Put all ingredients into a slow cooker and mix until combined.
  • Set slow cooker to 'low.'
  • Leave for a minimum of 5 hours to slow cook.
  • Heat a low-calorie spray in a heavy-based pan with a lid.
  • Cook the beef and onions over high heat for 2 to 3 minutes until golden.
  • Add the courgettes and stir-fry for 3 to 4 minutes until they begin to soften.
  • Add the spice and toss well. Then add the vegetables and garlic. Reduce the heat and cook over medium heat for 5 minutes until the vegetables start to soften.
  • Pour in the stock and stir to coat; add the tomatoes, season with salt and pepper to your tasting and cover with the lid.
  • Simmer for 20 minutes over medium heat, stirring every so often until the veggies are tender. Optional: stir through a handful of freshly chopped coriander to serve.
