Gluten-free sloppy joes made from scratch in one pan, done in 30 minutes. The sauce uses ketchup, gluten-free Worcestershire, brown sugar, and mustard powder — ingredients most people already have — so there’s no reason to reach for a canned mix.

Why this recipe works

Two things matter here. First, browning the ground beef properly before adding any liquid — don’t rush this step. A good sear builds flavor that the sauce alone can’t replicate. Drain excess fat after browning so the sauce doesn’t turn greasy and thin. Second, the sauce simmers with the meat long enough to reduce and cling to the beef rather than pool at the bottom of the bun. That short simmer is what separates a sloppy joe from a meat soup on bread. Get those two steps right and the rest takes care of itself.

Substitutions that actually work

  • Ground beef: Ground turkey or chicken works well — cook to 165°F (74°C) internal temperature and expect a slightly lighter sauce. Ground pork is also a solid swap.
  • Worcestershire sauce: If you can’t find a gluten-free label, soy sauce (gluten-free tamari) plus a small splash of apple cider vinegar gets you close. Use about half the amount — tamari is saltier.
  • Brown sugar: White sugar, honey, or maple syrup all substitute 1:1. Honey adds a mild floral note; maple syrup is barely noticeable once the sauce reduces.
  • Ketchup: No ketchup? Use tomato paste thinned with a little water plus an extra teaspoon of sugar and a splash of vinegar. It’s less sweet but it works.
  • Gluten-free buns: Serve over baked potatoes, rice, or corn tortillas if GF buns aren’t available — skip the garnish on those versions, not worth the extra dish.

Common problems and fixes

  • Sauce is too thin and watery: Keep simmering uncovered on medium-low heat, stirring occasionally. It usually needs another 3–5 minutes beyond what feels right. Don’t add thickener — just reduce it.
  • Filling tastes flat or one-dimensional: Add a small splash more Worcestershire and a pinch of salt, then taste again. Flat flavor usually means it needs acid or salt, not more sugar.
  • Meat is clumping in large chunks: Break it up continuously with a wooden spoon or spatula during the first 3–4 minutes of browning, before any fat renders out. Once it sets in clumps it’s hard to fix.
  • Bun falls apart before you finish eating: Toast the bun cut-side down in a dry pan for 60–90 seconds before loading it. This creates a barrier that holds up against the sauce significantly longer.
  • Leftovers dry out when reheated: Add a tablespoon of water or a small spoonful of ketchup to the pan before reheating on low. The sauce tightens up in the fridge and needs a little liquid to loosen back to the right consistency.

  • Raw Meat Mince1½ pounds ground beef (minced beef)
  • Ripe Yellow Onion On A White Background½ cup onion - finely chopped
  • Red Pepper¼ cup red pepper (red capsicum) - finely chopped
  • Ketchup1 cup ketchup
  • Store Of Fresh Water1 cup water
  • Worcestershire Sauce2 tablespoons Worcestershire sauce - gluten-free
  • Ground Black Pepper Pile, Paths, Top¼ teaspoon ground black pepper
  • Dried Garlic½ teaspoon garlic powder
  • Wooden Bowl Of Salt¾ teaspoon salt
  • Bowl Of Brown Sugar2 tablespoons brown sugar
  • Mustard Isolated On White Background. Top View1 teaspoon mustard - dry and ground
  • Three Hamburger Buns With Sesame Isolated On A White Background8 small hamburger buns

Instructions
 

  • In a large skillet, cook the ground beef. When the meat has browned, add the onions and peppers. Cook until onions and peppers are softened. If needed, drain any excess fat.
  • Stir in ketchup, water, gluten-free Worcestershire sauce, black pepper, garlic powder, salt, brown sugar and dry mustard. Mix well.
  • Let simmer on medium heat for about 15 to 20 minutes, stirring frequently, or until sauce is thickened.
  • Serve on toasted, steamed or grilled buns.
