This is lasagna made with breaded, oven-roasted eggplant slices instead of pasta — no noodles, no boiling water, no gluten required. The eggplant gets a Parmesan-egg coating and a breadcrumb crust before it ever meets the beef, which is what keeps the layers from turning to mush. Total time is 90 minutes, most of it hands-off oven time.

The short version of why this works

Two things make this recipe succeed. First, the eggplant slices are coated and baked before layering — 25 minutes per side at 375°F. That step drives out moisture and builds a lightly crisp surface that holds up under the sauce instead of collapsing into a soggy layer. Second, the oven temperature jumps to 400°F for the final bake. The higher heat melts and browns the mozzarella top quickly without overcooking the layers underneath. Skip either step and the texture suffers.

Smart swaps

  • Breadcrumbs: Italian-seasoned breadcrumbs are called for. Plain breadcrumbs work — just add a pinch of dried oregano and garlic powder. For a gluten-free version, use certified GF breadcrumbs; the swap is 1:1 and the coating behaves the same way.
  • Neapolitan/pasta sauce: The recipe uses 8 oz of chunky tomato sauce. Any jarred marinara works. Avoid thin, watery sauces — they make the layers wet. If that’s all you have, simmer it down for 5 minutes first.
  • Mozzarella: Pre-shredded mozzarella melts fine here. Fresh mozzarella releases more water, so pat it dry with paper towel before using or the top layer will pool liquid.

Common problems and fixes

  • Eggplant releases water during the final bake: Eggplant holds a lot of moisture. Salt the raw slices lightly and let them sit for 10 minutes, then pat dry before dipping in the egg mixture. This pulls out excess liquid before it can waterlog your layers.
  • Coating falls off the eggplant: The egg-Parmesan mixture needs to coat each slice fully before the breadcrumbs go on. If the coating is sliding off, your slices may be wet — pat them drier. Press the breadcrumbs on firmly rather than just dusting.
  • Ground beef is greasy in the layer: After browning the beef for 10 minutes, tilt the pan and spoon off excess fat before adding the tomato sauce. Ground beef fat content varies; this one step keeps the finished dish from being oily.
  • Layers slide apart when slicing: The recipe says to allow it to cool before slicing — this matters. Give it at least 10 minutes out of the oven. Cutting too soon means the cheese and sauce haven’t set and everything slides. Use a sharp knife and a spatula to lift portions cleanly.
  • Top cheese browns too fast before the center is hot: If your mozzarella top is browning in under 10 minutes but the dish feels cold in the middle, tent loosely with foil and give it the full 15 minutes. The foil slows the browning without steaming the cheese.

Leftovers and meal prep

Leftovers keep well in an airtight container in the fridge for up to 4 days — the layers firm up overnight and actually slice more cleanly the next day, which makes it a solid make-ahead option. Reheat individual portions in a microwave for 2–3 minutes or in a 350°F oven for about 15 minutes covered with foil. For freezing, portion it first, wrap tightly, and freeze for up to 2 months; thaw overnight in the fridge before reheating. Freeze the whole assembled dish uncut if you want, but individual portions reheat faster and more evenly. Reheating from frozen in the oven at 350°F takes about 30–35 minutes covered — skip the microwave for frozen portions, the eggplant texture holds better with gentle oven heat.

  • Mozzarella Cheese Isolated On White Background2 cups mozzarella cheese - shredded, about 225g

    1 cup Italian-seasoned breadcrumbs - about 115g
  • Wooden Bowl Of Salt½ teaspoon salt - or to taste
  • Ground Black Pepper Pile, Paths, Top¼ teaspoon ground black pepper - or to taste
  • Glass Bowl Of Olive Oil Isolated On White Background2 tablespoons olive oil

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Line a large rimmed baking sheet with parchment paper (baking paper) and lightly grease with a teaspoon of olive oil.

  • In a medium bowl, beat the eggs with 2 tablespoons of water. Stir in the grated Parmesan cheese, salt, and pepper until well combined. Place the breadcrumbs in a separate shallow bowl.

  • Peel the eggplants and cut them into ¼-inch (6mm) thick rounds. Dip each slice first into the egg-Parmesan mixture, then dredge both sides in the breadcrumbs, pressing gently to adhere.

  • Place the eggplant slices on the prepared baking sheet and cook in the oven for about 25 minutes. Then, turn the eggplant slices on the other side and leave them in the oven for another 25 minutes.

  • Remove the eggplant slices from the oven when ready and increase the temperature to 400°F (200°C).
  • In a large skillet, add 2 tablespoons of olive oil, and when heated, add the ground beef. Add salt and pepper, stir and cook for 10 minutes, until the meat is browned. Add the tomato pasta sauce, stir everything together, and let the meat simmer for 2 minutes.

  • In a 9×13 inch (33x23cm) baking dish, place a layer of baked eggplant slices on the bottom. Spread one-third of the meat sauce over the eggplant and sprinkle with one-third of the mozzarella cheese. Repeat the layers twice more, finishing with the remaining mozzarella on top.
