Tater Tot Casserole is a baked ground beef dish with a creamy, cheesy filling and a layer of frozen tater tots that crisps up on top in the oven. It takes about 20 minutes of hands-on work, feeds a crowd from one pan, and reheats well — which is the real reason most people make it.

Ingredient notes

  • Condensed cream of mushroom soup: Use it straight from the can — do not add water. Cream of chicken works as a straight swap if that’s what you have.
  • Sour cream: Full-fat holds up better during baking and doesn’t break into watery pockets. Greek yogurt (full-fat) is a workable substitute.
  • Frozen tater tots: Keep them frozen right up until you layer them on. Thawed tots steam instead of crisp, and you’ll end up with a soggy top.
  • Sharp cheddar: Pre-shredded bags contain anti-caking starch that slows melting. Block cheese grated at home melts more evenly — skip the pre-shredded if you can.

Before you start

The one step that makes a real difference is draining the fat after browning the ground beef. Ground beef releases a significant amount of fat as it cooks, and if you skip draining, the filling turns greasy and the soup-sour cream mixture won’t bind properly — you’ll get a pooled, oily layer at the bottom of the casserole. Tilt the skillet and spoon off the fat, or transfer the meat briefly to a colander. Also make sure your beef hits 160°F (71°C) before it goes into the baking dish; the oven time is designed to crisp the tots and melt the cheese, not to finish cooking raw meat.

If something goes sideways

  • Tots are soft or pale on top: Your oven may run cool, or the dish was covered too long. Remove any foil for the last 15 minutes and switch to the broiler for 2–3 minutes, watching closely.
  • Filling is watery: The beef wasn’t drained well enough, or the sour cream was low-fat. Bake uncovered for an extra 10 minutes to drive off the moisture.
  • Cheese is rubbery, not melted: It was added too early and overbaked. Add cheese in the last 10–12 minutes of baking, not at the start.
  • Tots sank into the filling: The filling was too loose when you assembled the dish. Let the beef mixture cool for 5 minutes before adding the sour cream and soup — it thickens as it cools and gives the tots something to sit on.
  • Bottom layer is dry and crumbly: The casserole baked uncovered the whole time. Cover with foil for the first half of baking to trap steam in the filling, then uncover to crisp the top.

Keeping and reheating

Leftovers keep in the fridge for up to 4 days in an airtight container — portion it into individual servings before storing and reheating is much faster on a weekday. Reheat single portions in a 375°F (190°C) oven for 12–15 minutes to get the tots crispy again; the microwave works in a pinch but softens the top. The assembled, unbaked casserole can be frozen for up to 3 months — freeze it before baking, cover tightly with foil, and add 15–20 minutes to the bake time straight from frozen. Skip the garnish — not worth the extra dish when you’re pulling this out of the fridge for a quick meal.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, brown the ground beef over medium-high heat (about 5 minutes), breaking it apart with a wooden spoon until it's cooked through and begins to lightly caramelize.
  • Add the chopped onion and minced garlic to the skillet. Sauté until the onions are translucent and aromatic (approximately 3-4 minutes).
  • Reduce the heat to medium, and stir in the cream of mushroom soup and sour cream. Mix until smooth and creamy.
  • Season the mixture with salt and pepper to taste. Pour it into a greased 9x13-inch (23x33 cm) baking dish.
  • Sprinkle half of the shredded cheddar cheese evenly over the top of the mixture.
  • Arrange the frozen tater tots in a single layer to cover the entire surface of the mixture.
  • Top with the remaining cheddar cheese.
  • Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and the cheese is bubbly.
  • Let the casserole cool for 5 minutes before serving. Garnish with fresh parsley if desired.

Yes, and it’s one of the best things about this recipe. Assemble everything up to the point of adding the frozen tots, cover the dish, and refrigerate overnight.
