This is a ground turkey and sweet potato skillet cooked start to finish in one pan in about 40 minutes. The combination of lean turkey, naturally sweet potatoes, and a short list of warm spices makes a filling weeknight dinner that reheats well and doesn’t require any special equipment. One pan, straightforward steps, real food.

What makes this version work

Two things matter most here. First, browning the turkey properly before adding anything else — that means leaving it alone in the pan for a minute or two so it develops color on the bottom, not just steaming in its own moisture. That browned layer is where most of the savory flavor comes from. Second, cutting the sweet potatoes into small, even pieces (about half an inch) so they cook through in the same time the turkey finishes. Uneven chunks mean some pieces are still hard when others are done. Get those two things right and the rest takes care of itself.

About the ingredients

  • Ground turkey: Use 93% lean if you can find it. The extra-lean 99% version has almost no fat and can turn dry and crumbly in a hot skillet. A little fat keeps it moist.
  • Smoked paprika: This is different from regular sweet paprika — it has a deeper, slightly smoky flavor. It’s worth buying a small tin if you don’t have it. Regular paprika works in a pinch but the result is noticeably milder.
  • Sweet potatoes: Any variety works. Skip the pre-cut bags from the store — the pieces are usually too large and inconsistent.
  • Cayenne: Optional and easy to overdo. Start with a small pinch and taste before adding more.

Leftovers and meal prep

Leftovers keep well in an airtight container in the fridge for up to 4 days. The sweet potatoes soften a little more overnight, which most people don’t mind. To reheat, add a splash of water to the pan or container before microwaving — it prevents the turkey from drying out. This dish also freezes fine for up to 2 months; portion it into individual containers before freezing so you’re not thawing the whole batch at once. Skip the garnish — not worth the extra dish. Thaw overnight in the fridge before reheating.

If something goes sideways

  • The turkey is gray and wet, not browned: The pan wasn’t hot enough before the meat went in, or the pan was overcrowded. Spread the turkey out, turn the heat up to medium-high, and don’t stir it for at least 90 seconds.
  • The sweet potatoes are still hard when everything else is done: They were cut too thick or the heat was too low. Add 2 tablespoons of water, cover the pan with a lid or foil, and cook another 3–4 minutes — the steam will finish them quickly.
  • The bottom of the pan is burning: The heat is too high or the pan is too thin. Drop to medium, add a small splash of water, and scrape the bottom with a wooden spoon. Those browned bits will dissolve into the dish.
  • The turkey tastes bland: Ground turkey needs more seasoning than most people expect. Taste after the spices go in and before the sweet potatoes are fully cooked — it’s much easier to fix seasoning mid-cook than at the end.
  • Not sure if the turkey is cooked through: Use an instant-read thermometer. Ground turkey must reach 165°F (74°C) at the center — never serve it pink. If you don’t have a thermometer, make sure there is no pink color anywhere in the meat and the juices run clear.

  • Turkey Mince1 pound ground turkey - preferably organic
  • Sweet Potato2 cups sweet potato - peeled and diced
  • Ripe Yellow Onion On A White Background1 medium onion - chopped
  • Garlic3 cloves garlic - minced
  • Pile Of Red Paprika Powder1 teaspoon paprika - smoked
  • Ground Cumin1 teaspoon cumin - ground
  • Heap Of Cayenne Pepper1 pinch cayenne pepper - optional, for heat
  • Wooden Bowl Of Salt1 teaspoon salt - to taste
  • Ground Black Pepper Pile, Paths, Top½ teaspoon ground black pepper - freshly ground

    ¼ cup fresh cilantro - chopped, for garnish

Instructions
 

  • Heat the olive oil in a large skillet over medium heat until it starts to shimmer.
  • Add the chopped onion and sauté for about 3-4 minutes until translucent and slightly golden.
  • Stir in the minced garlic, cooking for another minute until fragrant.
  • Add the ground turkey to the skillet, breaking it up with a wooden spoon. Cook for 5-7 minutes until browned and no pink remains.
  • Mix in the diced sweet potatoes, paprika, cumin, cayenne pepper, salt, and black pepper. Stir to combine thoroughly.
  • Cover the skillet and cook on medium-low heat for 10-15 minutes or until sweet potatoes are tender, stirring occasionally.
  • Once cooked, adjust the seasoning if needed. Garnish with fresh cilantro before serving.

For extra aroma, you can add a drizzle of lime juice just before serving. To make a vegetarian version, substitute turkey with crumbled tofu or a plant-based ground meat alternative.
