Cheesy Pizza Hamburger Pie is a baked ground beef dish where seasoned extra-lean beef forms the crust of a 9-inch pie, topped with sautéed mushrooms and green onions, fresh green pepper and Roma tomato, dried herbs, and melted non-fat mozzarella. The honest reason to make it: one pan, 55 minutes, and you get protein, vegetables, and cheese in every slice without ordering out. It comes in at 260 calories and 28 grams of protein per serving, which is hard to beat for a weeknight dinner.

The technique that matters

The meat crust is the whole structure of this dish, so how you press it matters. Pack the beef mixture firmly and evenly up the sides of the pie pan — at least three-quarters of an inch thick — or the walls will slump inward during baking and you’ll lose the pocket that holds the toppings. Use the back of a spoon or damp fingers to smooth the surface. The second thing worth doing carefully is wringing out the soaked rye bread thoroughly before mixing it in. Too much moisture in the meat base and the crust steams instead of browning, leaving the bottom soft and difficult to slice cleanly. Squeeze the bread until it feels almost dry, then crumble it in. Those two steps — firm, even pressing and a dry bread binder — are what give you clean, holdable slices at the table.

Common problems and fixes

  • Watery toppings make the crust soggy: Mushrooms release a lot of liquid. Sauté them until that liquid has fully evaporated before adding them to the pie — not just until they look cooked. A wet mushroom layer will soak into the meat crust and prevent it from setting properly.
  • Cheese browns before the beef is cooked through: Ground beef in a thick pie shell needs to reach 160°F (71°C) at the center. If the cheese is darkening before 35 minutes are up, tent the pan loosely with foil for the last 10 minutes. Use an instant-read thermometer to confirm the meat is done — skip the garnish, not worth the extra dish — and check the center of the base, not the edge.
  • Pie sticks to the pan and falls apart when serving: Cooking spray alone sometimes isn’t enough, especially with lean beef. Line the bottom of the pie pan with a small round of parchment after spraying, then spray again. The 5-minute rest after baking is also non-negotiable — cutting too soon means the structure hasn’t set and slices will crumble.
  • Meat crust shrinks away from the sides: Extra-lean beef has less fat to hold it in place, so it can pull back during baking and leave a gap. Pressing the beef slightly above the rim of the pan before baking accounts for that shrinkage and keeps the sides intact.
  • Tomato slices make the top wet: Roma tomatoes are drier than beefsteak varieties, but if yours are very ripe, blot the slices with a paper towel before laying them on. This keeps the herb and cheese layer from sliding off and gives the top a cleaner finish.

Ingredients
 
 

  • Raw Meat Mince1 pound ground beef (minced beef) - extra lean
  •  
    1 piece rye bread - soaked in water and wrung out into crumbs; discard the crust
  •  
    1 ounce egg substitute
  • Dried Garlic⅛ teaspoon garlic powder
  • Ground Black Pepper Pile, Paths, Top1 pinch ground black pepper
  • Kosher Salt¼ teaspoon Kosher salt
  • Green Onions Isolated On White2 stalks green onions (scallions or green shallots) - sliced thin
  • Champignon Mushroom2 large mushrooms - (2 ounces) sliced thin
  • Fresh Green Pepper Isolated On White Background½ small green pepper (green capsicum) - seeded and diced
  • Roma Tomatoes1 large Roma tomatoes - sliced thin
  • Dried Basil Leaves In Wooden Bowl Over White¼ teaspoon dried basil
  • Oregano Dried In Wooden Bowl Over White¼ teaspoon dried oregano
  • Mozzarella Cheese Isolated On White Background½ cup Mozzarella cheese - non-fat shredded

Instructions
 

  • Preheat the oven to 375°F.
  • In a small bowl combine the beef, crumbled rye bread, egg substitute, garlic powder, pepper and salt. Coat a 9-inch pie pan with cooking spray. Press the beef into the pie pan making a crust.
  • Coat a non-stick sauté pan and sauté the shallots and mushrooms until almost cooked through. Place it on top of the beef shell. Top with diced green pepper and make rings of the tomato slices over the top. Sprinkle with herbs. Sprinkle with cheese and bake for 35 minutes until browned.
  • Allow the pie to rest for 5 minutes before removing from the pie pan onto a serving plate.
