Burger bowls are seasoned ground beef cooked in a skillet and served over fresh vegetables with a tangy Greek yogurt dressing — no bun, no fuss. The whole thing comes together in 35 minutes, which makes it a realistic weeknight dinner rather than a weekend project. Everyone builds their own bowl, so picky eaters and hungry adults can both walk away satisfied.

Before you start

The marinade does real work here, so give the beef the full 10 minutes to sit with the soy sauce, Worcestershire, garlic, and smoked paprika before it hits the pan. That short rest lets the salt begin drawing moisture into the meat rather than out of it during cooking, which keeps the beef juicy instead of dry and crumbly. The other thing that matters is pan temperature: get your skillet genuinely hot before adding the beef. A medium-high heat creates enough surface contact to brown the meat rather than steam it, and that browning is where most of the flavor comes from. Skip the honey in the dressing — the lemon and mustard are already well-balanced, and the sweetness isn’t worth the extra step for a family dinner.

Storage and reheating

Store the cooked beef and the vegetables separately in airtight containers in the fridge — the beef keeps well for up to 3 days, but the lettuce and cucumber will go limp fast if they sit next to warm meat. The yogurt dressing keeps for 2 days refrigerated; give it a stir before using since it can separate slightly. To reheat the beef, use a skillet over medium heat with a splash of water to loosen it, about 2–3 minutes — the microwave works too but tends to dry it out. The cooked beef freezes well for up to 2 months; thaw overnight in the fridge and reheat to 160°F (71°C) before serving. Freeze the beef only, never the dressed vegetables.

If something goes sideways

  • The beef is releasing a lot of liquid and won’t brown: the pan wasn’t hot enough before you added the meat, or the pan is overcrowded. Pour off the excess liquid, push the beef to one side, crank the heat, and let it cook undisturbed for a minute or two until it starts to color.
  • The dressing is too thick to drizzle: whisk in a teaspoon of cold water at a time until it loosens. Greek yogurt thickness varies by brand, so this is common.
  • The beef tastes flat despite the marinade: soy sauce brands vary a lot in saltiness and depth. Taste the cooked beef and add a small splash of Worcestershire directly to the pan, stir, and cook for 30 seconds to fix it quickly.
  • The red onion is too sharp for kids or sensitive eaters: soak the sliced onion in cold water for 10 minutes, then drain. It takes the raw bite down significantly without losing the crunch.
  • The bowl feels too light for bigger appetites: add a base of cooked rice or quinoa under the beef before piling on the vegetables. It stretches the recipe to feed more people without changing anything else.

Beef and Marinade

  • Raw Meat Mince500 grams ground beef (minced beef) - preferably grass-fed
  • Soy Sauce Bottles2 tablespoons soy sauce - low sodium
  • Worcestershire Sauce1 tablespoon Worcestershire sauce
  • Garlic2 cloves garlic - minced
  • Sweet Pepper Red Paprika Powder In Wooden Bowl Over White1 teaspoon smoked paprika

  • Cherry Tomatoes On Vine, Paths1 cup cherry tomatoes - halved

Dressing

  • Bowl Of Greek Yogurt¼ cup Greek yogurt - unsweetened
  • Mustard Isolated On White Background. Top View1 tablespoon mustard - whole grain
  • Fresh Lemon Juice, Juice Of Squeezed Lemons With Pulp In Wooden Bowl1 tablespoon lemon juice - freshly squeezed
  • Honeycombs With Honey½ teaspoon honey - optional for sweetness
  • Wooden Bowl Of Salt1 pinch salt
  • Ground Black Pepper Pile, Paths, Top1 pinch ground black pepper - freshly ground

Instructions
 

  • Start by marinating the ground beef. In a large bowl, combine the ground beef with soy sauce, Worcestershire sauce, minced garlic, and smoked paprika. Mix well and set aside to marinate for at least 10 minutes.
  • While the beef is marinating, prepare the accompaniments. Arrange the shredded lettuce, halved cherry tomatoes, sliced cucumber, and red onion in separate sections of a serving bowl or platter.
  • For the dressing, whisk together the Greek yogurt, whole grain mustard, lemon juice, honey (if using), salt, and pepper in a small bowl. Adjust seasoning to taste. Heat a non-stick pan over medium-high heat.
  • Once hot, add the marinated beef and sauté for about 5-7 minutes, breaking it apart with a spatula, until it's brown and cooked through.
  • The beef will exude a deep, rich aroma as it cooks. Assemble the hamburger bowls by placing a portion of the cooked beef in the center of each prepared accompanying bowl. Drizzle with the yogurt dressing.
