These stuffed peppers combine ground turkey and diced eggplant in a tomato-seasoned filling, baked inside halved red bell peppers until tender. The whole thing comes together in 25 minutes, which makes it a genuinely useful weeknight option rather than a weekend project. One pan for the filling, one baking sheet — that’s it.

Why this recipe works

Two things matter here. First, draining the liquid from the skillet before stuffing the peppers keeps the filling dense and scoopable instead of soupy — eggplant releases a surprising amount of moisture as it cooks, and skipping that drain step is the most common reason stuffed peppers turn out watery. Second, using halved peppers rather than whole ones cuts bake time significantly and gives you a flat, stable base that holds the filling without tipping. The eggplant also pulls real weight in this recipe: it absorbs the tomato paste and turkey fat as it softens, which means the filling stays moist even after 15 minutes in the oven without any added liquid.

If something goes sideways

  • Turkey is still pink after browning on the stovetop: Keep cooking. Ground turkey must reach 165°F (74°C) internally — check with an instant-read thermometer before it goes into the peppers. The oven bake time is not long enough to finish undercooked meat.
  • Eggplant is still firm when you pull it off the heat: Cut your dice smaller next time — chunks over ¾ inch take longer to soften. For now, add a splash of water to the pan, cover it for 2–3 minutes, and let it steam through before draining.
  • Peppers are still crunchy after 15 minutes in the oven: Large, thick-walled peppers need more time. Give them another 5–8 minutes and check by pressing the side — they should give easily. Tent loosely with foil if the tops are browning too fast.
  • Filling tastes flat: Tomato paste varies a lot by brand. Stir in an extra tablespoon and a pinch more salt, then taste again before stuffing. The filling should be well-seasoned on its own because the pepper adds sweetness that dilutes it slightly.
  • Too much liquid pooling on the baking sheet: The peppers themselves release juice as they bake. A rimmed baking sheet is essential — a flat pan will let it run into your oven.

Leftovers and meal prep

Stuffed peppers reheat well, which makes them worth cooking in a full batch even if you’re only feeding two people tonight. Store cooled leftovers in an airtight container in the fridge for up to 4 days. To reheat, microwave on medium power for 2–3 minutes rather than high — it keeps the pepper from going rubbery. For freezing, pull the filling out of the pepper halves, freeze the filling flat in a zip bag for up to 3 months, and stuff fresh peppers when you’re ready to use it. Frozen whole stuffed peppers tend to get waterlogged on thawing. If you’re prepping ahead for the week, the turkey-eggplant filling keeps well on its own in the fridge for 4 days and works just as well spooned over rice or into a wrap — skip the garnish on the meal-prep portions, not worth the extra dish.

  • Red Pepper5 large red pepper (red capsicum)
  • Turkey Mince2 pounds ground turkey (minced turkey) - free-range
  • Ripe Yellow Onion On A White Background1 large yellow onion - diced
  • Eggplants1 large eggplant (brinjal, aubergine, or guinea squash) - diced
  • Garlic6 cloves garlic - diced
  • Coconut Oil2 tablespoons coconut oil
  • Oregano (Origanum Vulgare) Leaves2 teaspoons oregano
  • Coarse Sea Salt Top View1 teaspoon Sea salt
  • Spoon With Tomato Paste Isolated On White Background6 tablespoons tomato paste - organic
  • Ground Black Pepper Pile, Paths, Top1 teaspoon ground black pepper - to taste
  • Parsley On White Background1 tablespoon parsley - chopped, for garnish

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit.
  • Cost a large baking pan with 1 tablespoon of coconut oil.
  • Cut each bell pepper in half and the out seeds and stem, then place face up on the baking sheet and set aside.
  • Heat 1 tablespoon of coconut oil in a large skillet over medium heat
  • Add in the turkey, garlic, onion, oregano and salt, and cook until turkey has browned on the outside.
  • Add diced eggplant and tomato paste, and cook until the eggplant is soft and the turkey is cooked through.
  • Remove the pan from heat, and drain the liquid from the pan
  • Spoon the turkey mixture into each bell pepper half, making sure to stuff them firmly and full.
  • Bake for 15 minutes; the peppers should be soft and stuffing browned.
  • Serve warm with a sprinkle of freshly chopped parsley, and enjoy.
