Two medium eggplants get roasted until soft, then loaded with a spiced tomato and chickpea filling that includes precooked ground chicken — giving you a complete, protein-forward meal in 45 minutes. The chicken and chickpeas together mean each serving delivers 13 grams of protein at only 151 calories, which is a genuinely useful number if you’re watching intake without sacrificing a filling dinner. It’s a straightforward bake that works equally well fresh out of the oven or cold from the fridge the next day.

Before you start

The single technique that makes or breaks this recipe is how long you roast the eggplant before adding the filling. Eggplant has a high water content, and if it isn’t roasted long enough in the first two stages, the flesh stays spongy and the filling sits on top rather than melding into it. You want the cut surface to be visibly golden and the flesh to yield easily when pressed — that’s your cue, not the clock. Ovens vary, so check at 12 minutes rather than waiting the full 15. The second thing worth knowing: the ground chicken in the filling is already precooked, so the stovetop step is purely about building flavor in the sauce and warming everything through. Keep the heat low and stir regularly — you’re not trying to cook raw meat, just infuse the spices into the tomato base before it goes back in the oven.

If something goes sideways

  • Filling is watery and won’t stay on the eggplant: The tinned tomatoes released too much liquid. Simmer the filling an extra 3–4 minutes uncovered before spooning it on, until it thickens enough to mound slightly.
  • Eggplant halves are collapsing or too soft to hold filling: They were roasted too long or the flesh was scooped out too aggressively. Next time, leave at least 1 cm of flesh attached to the skin. For now, transfer carefully with a wide spatula and serve in a shallow bowl.
  • Garlic burned before the eggplant finished roasting: Garlic pressed into hot eggplant flesh can scorch quickly. If the tops are browning too fast, lay a small piece of foil loosely over just the garlic cloves for the last few minutes.
  • Filling tastes flat despite the spices: Canned chickpeas and tinned tomatoes both need more salt than you’d expect. Taste the filling before it goes on the eggplant and add salt in small increments — this is the moment to fix it, not after baking.
  • Chickpeas are mushy: Canned chickpeas are already fully cooked and soften further with heat. If you prefer more texture, add them to the pan in the last 2 minutes of simmering rather than at the start.

Substitutions that actually work

  • Ground chicken (precooked): Precooked ground turkey works directly in its place. If you only have raw ground chicken, cook it through to 165°F (74°C) in the pan before adding the tomatoes — never serve ground poultry undercooked.
  • Passata / tomato purée: A tablespoon of tomato paste (the concentrated kind in a tube) does the same job of tightening the sauce and adding depth. Use slightly less — it’s stronger.
  • Chickpeas: Canned white beans (cannellini or butter beans) swap in cleanly and hold their shape a little better. The protein count stays similar.
  • Fresh chili: Half a teaspoon of dried chili flakes is a reliable substitute if you don’t have fresh. Add it with the other dried spices.
  • Fresh basil garnish: Skip the garnish — not worth the extra dish if you don’t already have fresh herbs on hand. The dried spices in the filling carry the flavor on their own.

Keeping and reheating

Leftovers keep well in an airtight container in the fridge for up to 3 days. The filling actually improves overnight as the spices settle in. To reheat, place the stuffed eggplant halves in an oven-safe dish, cover loosely with foil, and warm at 180°C (350°F) for 12–15 minutes. Microwaving works too — 2 minutes on medium power, checking halfway through, prevents the eggplant from going rubbery. For freezing, the filling freezes better than the assembled dish; eggplant turns watery once frozen and thawed. Freeze the chickpea-chicken mixture separately in a sealed container for up to 2 months, then roast fresh eggplant when you’re ready to serve.

Ingredients
 
 

  • Eggplants2 medium eggplant (brinjal, aubergine, or guinea squash)
  • Garlic6 cloves garlic
  • Tomatoes1 tin tomatoes - diced
  • Pile A Chickpeas C.arietinum, Paths1 tin chickpeas - drained
  • Chicken Mince1 cup ground chicken (minced chicken) - precooked
  • Crushed Tomatoes2 tablespoons passata or crushed tomatoes (tomato puree with seeds removed)
  • Red Chilly Peppe½ tablespoon red chili (red chilli in British English)
  • Ground Black Pepper Pile, Paths, Top1 teaspoon ground black pepper
  • Coarse Sea Salt Top View1 teaspoon Sea salt
  • Heap Of Dried Coriander Seed And Ground Coriander On White Background1 teaspoon ground coriander
  • Pile Of Red Paprika Powder1 teaspoon paprika
  • Green Basil1 tablespoon basil

Instructions
 

  • Preheat fan oven to 200 degrees Celsius.
  • Wash the eggplant and slice in half lengthways. Place in a ceramic dish, drizzle with plenty of oil (use coconut oil or olive oil) and sprinkle with ground coriander and sea salt. Place in the oven to roast for 15 minutes.
  • Peel the garlic cloves and halve them lengthways. After 15 minutes, remove the eggplant from the oven, drizzle with more oil and distribute the garlic cloves evenly on top. Press them down a little into the hot flesh of the eggplant. Return to the oven.
  • Place a medium-sized pan on the hob on low heat. Add the diced tinned tomatoes, drained chickpeas, tomato purée, chicken, and mix thoroughly. Dice the chilli very finely and add it to the pan. Then add the coriander, paprika, and lashings of sea salt and black pepper to taste. Stir regularly so that the mixture simmers.
  • If you have fresh coriander (cilantro), add as much of that as you wish.
  • After 5 minutes, once all the flavours have begun to infuse through the sauce, taste the tomato chickpea mixture and season further if you wish.
  • Remove the eggplant from the oven once it begins to brown nicely and the garlic on top is nice and soft (before it burns). Spoon the chickpea mixture evenly over the 4 halves and return to the oven for 5 minutes.
  • Remove the stuffed eggplants from the oven and sprinkle with lots of fresh basil and or coriander and if you’re feeling naughty, sprinkle some parmesan on there. Serve hot or cold!

Can I make this completely vegetarian by leaving out the ground chicken?

Yes — the dish works without the chicken. To keep the protein content meaningful, increase the chickpeas by half a can or add a handful of cooked lentils to the filling.

Does the eggplant need to be salted and drained before roasting?
