These stuffed bell peppers use ground turkey, black beans, corn, and cumin to make a filling that’s genuinely satisfying without being heavy. The pepper acts as its own baking dish, which keeps things simple. At 317 calories and 38g of protein per serving, it earns its place on a regular weeknight rotation.

Before you start

The one thing that matters most here is browning the turkey properly before anything else goes in. Ground turkey has very little fat, so it can steam and turn grey instead of browning if you crowd the pan or rush it — use medium-high heat and let it sit undisturbed for a minute before breaking it up. The second thing worth knowing: cut the tops off the peppers cleanly and reserve them if you want a lid, but more importantly, make sure the peppers can stand upright in your baking dish before you fill them. A wobbly pepper tips over and spills filling into the broth — trim a thin slice off the bottom if needed, being careful not to cut through.

Ingredient notes

  • Ground turkey: Use 93% lean rather than 99% if you can find it. The small amount of extra fat keeps the filling from drying out during the 40-minute bake.
  • Black beans: Rinse them well — the canning liquid is salty and will throw off the seasoning balance.
  • Chicken stock: This goes into the bottom of the baking dish, not into the filling itself. It creates steam under the foil that softens the peppers without making the filling watery. Bouillon dissolved in hot water works fine.
  • Parmesan vs. melting cheese: Parmesan listed in the ingredients doesn’t melt the way cheddar or pepper jack does — skip the Parmesan and use a proper melting cheese if you want that browned, bubbly top. Skip the garnish entirely if you’re avoiding the extra dish for grating.

What can go wrong

  • Peppers still crunchy after 40 minutes: Oven temperature variation is usually the cause. If your peppers are on the thick side or your oven runs cool, add 5–10 minutes with the foil still on before adding cheese.
  • Filling is dry: Ground turkey loses moisture fast. Make sure you pour the full cup of stock into the bottom of the dish and that the foil is sealed tightly around the edges so steam can’t escape.
  • Turkey not reaching safe temperature: Ground turkey must reach 165°F (74°C) internally. The filling is cooked on the stovetop first, so by the time the peppers finish baking it’s well past that — but if you’re doubling the batch and the filling is packed in tightly, check the center of the filling with a thermometer before serving.
  • Peppers falling apart when serving: Letting the peppers rest for 5 minutes out of the oven before plating helps them hold together. They’re fragile straight from the dish.
  • Bland filling: Cumin loses punch if it’s been sitting in the cupboard for over a year. Taste the filling before stuffing the peppers and add a pinch more cumin or a small squeeze of lime juice to sharpen the flavor.

Leftovers and meal prep

Stuffed peppers keep well in the fridge for up to 4 days in a sealed container. Reheat them in a 350°F oven for about 15 minutes, or microwave on medium power for 2–3 minutes — high power tends to make the pepper skin rubbery. They also freeze well: wrap each pepper individually once fully cooled and freeze for up to 3 months. Thaw overnight in the fridge before reheating. If you want to get ahead, you can make the filling up to 2 days in advance and store it separately, then stuff and bake the peppers fresh — the filling actually tastes better the next day after the spices have had time to settle.

Ingredients
 
 

  • Fresh Green Pepper Isolated On White Background4 medium green pepper (green capsicum)
  • Turkey Mince1 pound ground turkey (minced turkey) - or beef
  • Fresh Sweet Corn⅓ cup corn - frozen
  • Black Beans On White Background1 can black beans - rinsed
  • Ripe Yellow Onion On A White Background½ medium yellow onion - chopped
  • Garlic4 cloves garlic - minced
  • Ground Cumin1 tablespoon cumin
  • Bowl Of Fresh Chicken Broth1 cup chicken stock (chicken broth or chicken bouillon)
  • Parmesan Cheese½ cup Parmesan cheese - optional
  • Wooden Bowl Of Salt1 dash salt
  • Ground Black Pepper Pile, Paths, Top1 dash ground black pepper

Instructions
 

  • Preheat oven to 400 degrees Fahrenheit.
  • Brown the ground turkey in a skillet.
  • Add onions, garlic, and corn. Let cook for 5 minutes.
  • Add in cumin, salt, pepper, and black beans. Cook for another 5 min.
  • Hollow out bell peppers and arrange them in an appropriate baking dish. (I used a 6×8 Pyrex glass dish.)
  • Stuff bell peppers with sautéed mix and pour beef broth into the bottom of the baking dish.
  • Cover with tin foil and allow to bake for 40 minutes.
  • If you’re using cheese, take the bell peppers out at 30 minutes, add the cheese to the top then place it back in the oven for 10 minutes uncovered. I would recommend using a jack, pepper jack, or cheddar cheese.

FAQ

Can I use red or yellow bell peppers instead of green?

Yes, and they work well. Red and yellow peppers are sweeter and softer than green, so they’ll become tender a few minutes faster in the oven — check them at the 35-minute mark.

Do I have to pre-cook the turkey filling before baking?

Yes — this recipe cooks the filling on the stovetop first, and that step is not optional. Ground turkey must reach 165°F (74°C) to be safe, and the baking time alone is not long enough to guarantee that if the filling goes in raw.

Can I make this without the black beans?

You can swap them for kidney beans or chickpeas without changing anything else. Leaving them out entirely is fine too, but the filling will be looser and less substantial since the beans add bulk and help hold everything together.

My baking dish is bigger than the peppers — will they tip over?

They will if there’s nothing holding them upright. Pack them snugly together or prop them against each other in the dish; if you have fewer peppers than the dish fits, crumple a small piece of foil around the base of each one to keep it stable.
