These are individual turkey meatloaves baked in a muffin tin — same ingredients as a standard meatloaf, faster cook time, and built-in portions that work for dinner, lunch boxes, or a quick high-protein meal any time of day. Ground turkey dries out easily in the oven, so this recipe uses a few specific techniques to keep that from happening. If you’ve written off baked ground turkey before, this is worth trying.

Shopping notes

  • Ground turkey: Use 93% lean, not 99%. The extra fat makes a real difference in texture. Fully fat-free ground turkey will dry out regardless of technique.
  • Zucchini: Any standard zucchini works. Squeeze out the grated flesh in a clean towel before adding — skip this and the mixture turns soggy.
  • Grating the onion and garlic: This is not a typo in the recipe. A box grater works fine. The goal is juice, not chunks.

What makes this version work

Two things separate this from a dry turkey muffin: grating the aromatics instead of chopping them, and mixing in finely shredded vegetables. Grated onion and garlic release their liquid directly into the meat, so moisture is distributed through every bite rather than sitting in isolated pockets. The vegetables — particularly zucchini — do the same job. Together they act as built-in insurance against the lean protein seizing up and drying out during baking. Skip either one and you’re back to the chalky texture that gives baked ground turkey a bad reputation. Use both and the muffins stay genuinely tender all the way through.

What can go wrong

  • Mixture sticks to the tin: Grease the muffin cups thoroughly, including the flat top surface between cups. A light spray of oil is faster than butter and works better here. Silicone muffin pans are the easiest option if you have one.
  • Muffins collapse when you remove them: They need a 5-minute rest in the tin after coming out of the oven. Pulling them immediately causes them to fall apart — the structure hasn’t set yet.
  • Uneven cooking across the batch: Muffin tins heat differently depending on their position in the oven. Rotate the tin halfway through baking if your oven runs hot on one side. Always verify doneness with a thermometer — ground turkey must reach 165°F (74°C) at the center.
  • Mixture too wet to hold shape: If you added zucchini without squeezing it, or used very watery vegetables, the mixture won’t firm up properly. Add a tablespoon of breadcrumbs at a time until it holds together when pressed.
  • Flat, dense texture: This comes from overmixing. Combine the ingredients until just incorporated — stop as soon as you can’t see dry patches. Overworked ground turkey compacts and turns rubbery.

Keeping and reheating

Cooked turkey muffins keep in the fridge for up to 4 days in a sealed container. For freezing, let them cool completely, then freeze individually on a tray before transferring to a bag — this stops them sticking together and means you can pull out exactly what you need. Frozen muffins keep well for up to 3 months. Reheat from the fridge in a microwave for 60–90 seconds, or in a 325°F (160°C) oven for about 10 minutes. From frozen, add 2–3 minutes in the microwave or 15–20 minutes in the oven. Skip the garnish before storing — not worth the extra dish, and it wilts anyway.

Ingredients
 
 

  • Turkey Mince1 pound ground turkey (minced turkey)
  • Chicken Egg1 medium egg
  • Ripe Yellow Onion On A White Background1 small yellow onion - grated
  • Garlic1 clove garlic - grated
  • White Bowl With Dijon Mustard1 tablespoon Dijon mustard
  • Bottle Of Sauce2 tablespoons BBQ sauce (barbecue sauce)
  • Carrot Vegetable With Leaves1 medium carrots - grated
  • Spinach1 cup spinach - finely chopped
  • Fine Breadcrumbs, Also Breading Or Crispies In Wooden Bowl⅓ cup breadcrumbs

Instructions
 

  • Preheat your oven to 400 degrees Fahrenheit.
  • In a large bowl, mix all of the ingredients by hand.
  • Separate into balls and place in a muffin tin (the silicone muffin pans work great for these as you don’t have to grease them)
  • Bake for 20 to 25 minutes.
  • Serve with your favourite sides and topped with your topping of choice.

Yes, ground chicken works as a direct swap and needs the same internal temperature of 165°F (74°C). Stick with thigh-based ground chicken rather than breast-only if you can find it — the fat content is closer to 93% lean turkey and the result will be less dry.
