Coming up with a family-friendly, nutritious dinner can sometimes be a real challenge, especially when you’re juggling the needs of kids, picky eaters, and dietary restrictions. Our kids are absolute taco fanatics. Whether it’s a crunchy taco night or a taco salad, anything with that familiar combination of seasoned meat, beans, and cheese is sure to be a hit. So one evening, when I realized I’d promised tacos but didn’t have all the traditional fixings, I decided to pull together a new idea. I took the flavors they loved and turned them into a hearty, wholesome casserole. And because one of our family members is sensitive to gluten, it was important to make it completely gluten-free, too. That’s where the gluten-free Bisquick mix came in—making fluffy, satisfying biscuits without the worry.
At first, when I announced that we were having a casserole, our daughter gave me a horrified look and nervously asked, “What is a casserole?” It turns out that casseroles really aren’t something I typically serve at home. But her reaction after taking the first bite reassured me I made the right choice. She even loved it so much she asked to take it to school for lunch the next day — a true compliment.
This Healthy Gluten-Free Turkey Taco Casserole brings together simple, wholesome ingredients. It starts with lean ground turkey, seasoned tastes just like taco meat we all know and love. The turkey gets simmered with a warm mix of taco seasoning, chili powder, and garlic powder, along with hearty kidney beans, sweet corn, and a rich blend of tomato sauce and paste.
Instead of traditional taco shells or tortillas, the base of this casserole is a fluffy layer of gluten-free Bisquick biscuits. They bake up soft and tender underneath the savory turkey filling, soaking up all the incredible flavors. And of course, no taco-inspired meal would be complete without melty, gooey cheddar cheese sprinkled generously over the top.
One of my favorite things about this recipe is how customizable it is. You can easily add diced peppers, swap the kidney beans for black beans, or sprinkle some jalapeños on top for a spicier kick. Plus, it’s perfect for meal-prepping—this casserole holds up great in the fridge and makes quick work of lunchboxes or busy weeknight dinners. Healthy Gluten-Free Turkey Taco Casserole
Ingredients
Turkey Casserole Ingredients
1 pound ground turkey (minced turkey)
1 teaspoon Canola oil- 1 pack bisquick mix - gluten-free, from Betty Crocker
398 ml ketchup (tomato sauce Australia and UK)
5 ounces tomato paste
14 ounces corn - drained- 19 ounces kidney beans - rinsed and drained
2 teaspoons taco seasoning
1 teaspoon chili powder (chilli powder in British English)
1 teaspoon garlic powder
¼ teaspoon salt
¼ teaspoon ground black pepper
1 cup cheddar cheese - shredded
Bisquick Biscuits Ingredients
- 1 cup bisquick mix
2 tablespoons margarine
⅓ cup milk
2 medium eggs - beaten with a fork
Instructions
Turkey Casserole Instructions
- Put oil in a frypan and brown your ground turkey until it is cooked. Add the seasonings, can of tomato sauce, tomato paste, water, corn, and beans. Stir until heated through; keep on low until you have biscuits ready.
Bisquick Biscuits Instructions
- Rub the margarine with your hands into the mix until crumbly. Use a spoon to mix in milk and eggs. Spoon your biscuit batter evenly on the bottom of a greased casserole dish.
- Evenly pour the turkey mixture over the biscuits. Bake in a 350-degree Fahrenheit oven for about 25 minutes, or until you are sure the biscuits are cooked–use a toothpick to ensure they are cooked.
- Sprinkle the cheese on top of the meat mixture and cook for 10 minutes to melt the cheese. Allow the casserole to sit for 5 minutes before you serve.
- Serve as is, or you can serve with sour cream and salsa.
