I know I was supposed to post this Easy Turkey Quinoa Chilli recipe last night (sorry!), but my computer went haywire, and by the time I got it running again I was starting to fall asleep!

So onto the Easy Turkey Quinoa Chilli recipe! I promise you will not miss the beef and pork usually found in the common chilli. This healthified version is packed full of flavor and will be a sure hit at your next party. It’s a full-proof recipe that you can easily adjust to fit your family’s preferences or what you have on hand.

This Easy Turkey Quinoa Chilli recipe makes A LOT of chilli, so if you’re a small family of two, it’s perfect for leftovers during the week and freezes very well.

OK, So this is what you’ll need… Lots of veggies… and lots of beans and tomatoes. You’ll notice here that I used stewed tomatoes instead of what I call for in the ingredients list, which is crushed tomatoes. The grocery store I went to did not have low sodium crushed tomatoes, so I opted for stewed and crushed them myself using my food processor!

Ground turkey (and quinoa… and lots of spices… forget to get a picture of those… oops!)

First, you’ll want to chop all your veggies, add them to a well-oiled pot, and mix in the spices

Once softened (10-12 minutes), add the turkey and break up with a spoon and cook until no longer pink (about 5 minutes). Lastly, add all the beans, tomatoes and quinoa and give it a good stir.

Now let’s start cooking the Easy Turkey Quinoa Chilli!
