OK, So this is what you’ll need… Lots of veggies… and lots of beans and tomatoes. You’ll notice here that I used stewed tomatoes instead of what I call for in the ingredients list, which is crushed tomatoes. The grocery store I went to did not have low sodium crushed tomatoes, so I opted for stewed and crushed them myself using my food processor!
Ground turkey (and quinoa… and lots of spices… forget to get a picture of those… oops!)
First, you’ll want to chop all your veggies, add them to a well-oiled pot, and mix in the spices
Once softened (10-12 minutes), add the turkey and break up with a spoon and cook until no longer pink (about 5 minutes). Lastly, add all the beans, tomatoes and quinoa and give it a good stir.
