Why this recipe works

Two things make this recipe reliable. First, the cornstarch slurry — cornstarch mixed with water, soy sauce, and oil — coats the cooked turkey and locks in moisture while also helping the filling bind inside the wrapper instead of sliding around. Second, baking at 425°F is hot enough to crisp the egg roll skin through steam evaporation rather than oil absorption, especially when you spray the tops generously. Mistakes to avoid

  • Under-spraying the tops: A light mist isn’t enough. Give the tops a solid coat of cooking spray — uncoated patches stay pale and papery instead of browning.
  • Not confirming the turkey is cooked through: Ground turkey must reach an internal temperature of 165°F (74°C). Brown it fully in the pan before wrapping — the oven time is for crisping the shell, not cooking raw meat.

Storage and reheating

Cooled egg rolls keep in an airtight container in the fridge for up to 4 days. For freezing, arrange them in a single layer on a tray until solid, then transfer to a freezer bag — they’ll keep for up to 2 months. Reheat refrigerated rolls in a 375°F oven for 8–10 minutes or in an air fryer at 370°F for 5–6 minutes; both methods restore the crunch that a microwave destroys. Frozen rolls go straight from the freezer into a 375°F oven for 18–22 minutes — no need to thaw first. Check that the center reaches 165°F (74°C) before serving reheated rolls, especially from frozen.

Ingredients
 
 

  • Turkey Mince1 ½ pounds ground turkey (minced turkey)
  • Garlic1 clove garlic - minced
  • Corn Starch4 teaspoons cornstarch
  • Store Of Fresh Water1 tablespoon water
  • Soy Sauce Bottles1 tablespoon soy sauce - light
  • Vegetable Oil1 teaspoon vegetable oil
  • Bowl Of Brown Sugar1 teaspoon brown sugar
  • Heap Of Cayenne Pepper1 pinch cayenne pepper
  • Heap Of Ground Ginger1 teaspoon ground ginger
  • Heap Of Fresh Bean Sprouts14 ounces bean sprouts - drained
  •  
    ½ can water chestnuts - chopped
  • Fresh Cabbage2 cups cabbage

Instructions
 

  • Brown the ground turkey. Drain. Return to pan with garlic.
  • Combine cornstarch, water, soy sauce, oil, brown sugar, cayenne, and ground ginger in a small bowl. Stir into turkey and garlic. Set aside.
  • Combine cabbage, bean sprouts and water chestnuts in another skillet. Cook over medium heat until vegetables are tender for about 5 to 8 minutes.
  • Combine turkey and seasoning with vegetables. Mix well.
  • Lay Out one egg roll skin with a corner pointed towards you. Place about 1/3 – 1/4 cup of turkey mixture on egg roll paper. Fold corner up over the mixture. Fold left and corners in and continue to roll.
  • Put the seam side down on your baking sheet coated with non-stick cooking spray.
  • Spray top of egg rolls with non-stick cooking spray.
  • Bake at 425 degrees Fahrenheit for 10 to 15 minutes or until lightly browned.
