Pork Mince Curry Ingredients

  • Vegetable Oil1 tablespoon vegetable oil
  • Ripe Yellow Onion On A White Background1 medium onion - finely chopped
  • Garlic2 cloves garlic - minced
  • Ginger1 thumb-sized piece ginger - grated
  • Pork Mince500 grams ground pork (minced pork) - preferably organic
  •  
    2 tablespoons curry powder blend - medium heat
  •  
    400 grams canned diced tomatoes
  • Pitcher Of Milk And Coconut Isolated On White Background1 cup coconut milk
  • Coarse Sea Salt Top View1 teaspoon sea salt - to taste
  •  
    1 cup frozen peas
  • Big Bunch Of Fresh Green Cilantro Isolated1 handful cilantro - fresh, chopped, for garnish

Instructions
 

  • Heat the vegetable oil in a large pan over medium heat. Add the onion and sauté until golden brown, approximately 5-7 minutes.
  • Stir in the garlic and ginger, and cook until fragrant, about 1 minute.
  • Add the pork mince to the pan, breaking it up with a wooden spoon. Cook until browned and fully cooked, around 10 minutes.
  • Stir in the curry powder and let it cook with the pork for about 2 minutes for the spices to develop their flavor.
  • Add the canned tomatoes and coconut milk, stirring well. Bring the mixture to a gentle simmer and season with sea salt to taste.
  • Simmer uncovered for 15 minutes, letting the sauce thicken. Stir occasionally.
  • Add the frozen peas and cook for an additional 5 minutes.
  • Remove from heat and garnish with fresh chopped cilantro before serving.
