This is a sautéed ground pork dish built around soy sauce, garlic, onion, and a mix of diced vegetables — potatoes, carrot, red pepper, and green beans. It comes together in 25 minutes with one pan and a short ingredient list. If you need a reliable weeknight meal that doesn’t require much experience, this is a solid place to start.

Why this recipe works

Two things make this recipe dependable. First, the garlic and onion go in before the meat — not after. That order builds a savory base in the oil, and the pork picks up that flavor as it cooks rather than just sitting in its own fat. Second, the vegetables go in after the meat is mostly cooked through, not at the start. Ground pork releases moisture as it cooks; adding the potatoes and carrots too early means they steam and turn soft before the pork has any color. Keeping them separate until the meat is done gives you vegetables that hold their shape and pork that actually browns. Ground pork must reach an internal temperature of 160°F (71°C) — never serve it pink.

Troubleshooting

  • The pork is releasing a lot of liquid and won’t brown: Your pan isn’t hot enough, or it’s overcrowded. Use a wide pan and make sure the oil is shimmering before the meat goes in. If liquid pools, turn the heat up and keep stirring until it evaporates.
  • The garlic burns before the onion softens: Add the garlic first and watch it closely — golden brown happens fast. Have the onion ready to go in immediately after. If your garlic goes dark and bitter, wipe the pan and start again; burnt garlic will flavor the whole dish.
  • The potatoes are still hard when everything else is done: Dice them small — roughly half an inch. Larger chunks won’t cook through in the five-minute simmer. If they’re still firm, add a tablespoon of water, cover, and give them another two to three minutes on low heat.
  • The soy sauce makes the dish too salty: Soy sauce brands vary a lot in saltiness. Start with one tablespoon, taste after everything is combined, then add more if needed. Skip the MSG if your soy sauce is already on the salty side — skip the garnish too, not worth the extra dish.
  • The meat is clumping into large chunks: Break it up with a wooden spoon or spatula as soon as it hits the pan. Don’t walk away — the first two minutes of cooking are when clumps form. Keep moving it until you have an even, crumbled texture.

Leftovers and meal prep

Store leftovers in an airtight container in the fridge for up to three days. The potatoes will soften a little more overnight, which is fine. To reheat, use a pan over medium heat with a splash of water to loosen things up — the microwave works too, but stir halfway through so the pork heats evenly. For freezing, skip the potatoes if you’re planning ahead; cooked potatoes turn grainy after freezing. Everything else in this recipe freezes well for up to two months. Portion it before freezing so you can thaw only what you need. Thaw overnight in the fridge, not on the counter.

Your questions, answered

How do I know when the ground pork is fully cooked?

Ground pork is safe to eat when it reaches an internal temperature of 160°F (71°C) — use an instant-read thermometer if you have one. If you don’t have a thermometer, look for no remaining pink color anywhere in the meat and juices that run clear, not red or cloudy.

Can I use a different protein instead of ground pork?

Yes — ground chicken or ground turkey work well with the same vegetables and soy sauce base. If you swap in ground poultry, cook it to 165°F (74°C) internal temperature, and expect it to be slightly leaner, so it may cook a little faster and stick more easily to the pan.

Do I need to pre-cook the green beans before adding them?

The recipe calls for cooked green beans, so yes — blanch or steam them briefly before they go into the pan. Raw green beans added at the same stage as the other vegetables won’t soften enough in the short simmer time and will end up tough.
