Chicken kheema is spiced ground chicken cooked down with onions, tomatoes, ginger, garlic, and a short list of pantry spices into a thick, savory mince. It comes together in about 30 minutes, reheats perfectly, and works with rice, flatbread, or stuffed into just about anything. That combination of speed and flexibility is the real reason to keep it in regular rotation.

Before you start

The single technique that makes or breaks this dish is cooking the onions long enough before anything else goes in. Undercooked onions leave a sharp, raw bite that no amount of spice will cover. Give them a full 8–10 minutes over medium heat until they’re soft and starting to turn golden — that’s what builds the base flavor. The second thing that matters: break the ground chicken up thoroughly as soon as it hits the pan. Ground poultry clumps easily and must reach 165°F (74°C) throughout, so even cooking depends on getting it into small, even pieces from the start. A wooden spoon or a flat spatula pressed down and dragged across the pan works better than stirring.

Mistakes to avoid

  • Adding tomatoes too early: If the onions and spices haven’t had time to cook first, the acid from tomatoes stops the onions from softening further. Add tomatoes only after the spice paste has cooked for a couple of minutes and smells fragrant.
  • Crowding the pan: Ground chicken releases moisture quickly. A pan that’s too small traps steam and the mince ends up stewing rather than browning. Use a wide skillet or sauté pan and don’t rush to stir — let some evaporation happen.
  • Skipping the dry-out step: Once the chicken is cooked through, keep the heat on medium and let excess liquid cook off until the mixture looks thick and the oil starts to separate slightly at the edges. This is what gives kheema its characteristic texture and makes it easier to scoop with flatbread.
  • Storing it wet: If you’re making a batch for the week, let the kheema cook slightly drier than you think you need. It absorbs a little moisture in the fridge and reheats better with a splash of water added then rather than stored with liquid already in it.

Substitutions that actually work

  • Ground turkey for ground chicken: A straight swap — same cook time, same internal temperature target of 165°F (74°C). Turkey is slightly leaner so watch the pan; it can stick faster.
  • Canned crushed tomatoes for fresh: Use about 3 tablespoons. Fresh tomatoes vary a lot in acidity and water content; canned is actually more consistent here.
  • Frozen peas added at the end: A common addition that works well — stir in a handful in the last 2 minutes. No need to thaw them first. Skip the garnish of fresh coriander if you don’t have it — not worth a special trip to the store.
  • Garam masala blends vary widely: If yours is heavy on clove or cardamom, use a little less than the recipe calls for and taste as you go.

Keeping and reheating

Chicken kheema keeps well in an airtight container in the fridge for up to 4 days. For longer storage, freeze in portion-sized containers for up to 3 months — it freezes cleanly because there’s no cream or yogurt in the base. Reheat from the fridge in a skillet over medium heat with 2–3 tablespoons of water to loosen it, stirring until hot throughout and the internal temperature reads 165°F (74°C) again. From frozen, thaw overnight in the fridge before reheating the same way. Microwave reheating works in a pinch — cover loosely, heat in 90-second intervals, and stir between each to avoid dry patches.

Ingredients
 
 

  • Chicken Mince250 grams ground chicken (minced chicken)
  • Ripe Yellow Onion On A White Background1 medium yellow onion - chopped
  • Tomatoes1 medium tomato - chopped
  • Heap Of Indian Masala Powder1 teaspoon garam masala
  • Garlic2 cloves garlic
  • Vegetable Oil1 teaspoon vegetable oil
  • Red Hot Chili Pepper Powder And Half Isolated On White Background1 teaspoon chili powder (chilli powder in British English)
  • Turmeric Powder In Plate1 teaspoon turmeric
  • Wooden Bowl Of Salt1 teaspoon salt

Instructions
 

  • Heat the oil in a pan.
  • Add the chopped onion and garlic. Saute until brown.
  • Add the chilli,garam masala and turmeric. Roast for 30 seconds.
  • Add the tomato and 2 tablespoons of water. Cook for 3 to 4 minutes till the tomato has started to disintegrate.
  • Add the minced chicken and cook for 15 to 20 minutes.
  • Garnish with coriander, and your lunch is ready.
