This is a ground chicken stir-fried rice with cabbage, carrots, scallions, and green chilies, seasoned with poultry seasoning, soy sauce, and a finish of sesame oil. It comes together in under 30 minutes of active cooking, and using ground chicken means the protein distributes evenly through every spoonful — no picking around big chunks. It’s a genuinely practical weeknight meal that uses simple, widely available ingredients.

The technique that matters

The single most important thing here is heat. Ground chicken releases moisture as it cooks, and if your pan isn’t hot enough, that liquid pools and the meat steams instead of browning. Get your oil shimmering before anything goes in. Break the chicken into small pieces quickly and keep it moving — you’re looking for light browning on the edges, not gray clumps. The second thing that matters is adding the rice last and pressing it against the hot pan surface for 30–60 seconds before stirring. That brief contact gives you the slightly crisp, separated texture that makes fried rice worth making. Ground chicken must reach an internal temperature of 165°F (74°C); if you’re unsure, a quick-read thermometer takes the guesswork out completely.

Smart swaps

  • Ground chicken: Ground turkey works as a direct swap and behaves almost identically in the pan.
  • Sesame oil: This is a finishing oil, not a cooking oil — a little goes a long way. If you don’t have it, skip it rather than substituting vegetable oil, which won’t give the same result. Skip the garnish — not worth the extra dish.
  • Green chilies: Fresh jalapeño or serrano works fine. For less heat, use a small amount of green bell pepper instead.
  • Poultry seasoning: A pinch of dried thyme and sage mixed together is a close stand-in.

Keeping and reheating

Leftovers keep well in an airtight container in the fridge for up to 3 days. For freezing, portion into flat zip-lock bags and freeze for up to 2 months — the rice texture holds better than you’d expect. To reheat from the fridge, a hot skillet with a splash of water (about a tablespoon) and a lid for 2–3 minutes works better than the microwave and brings back some of the original texture. From frozen, thaw overnight in the fridge first, then reheat the same way. Make sure reheated portions are piping hot all the way through before eating — ground poultry needs to hit 165°F (74°C) again after reheating.

If something goes sideways

  • The chicken is clumping into large pieces: This usually means the heat was too low when it went in. Break it up with a wooden spoon or spatula as soon as it hits the pan, before it has a chance to set into a mass.
  • The rice is sticking together in wet clumps: The rice was too warm or too moist going into the pan. Spread it out and leave it alone for a minute — resist the urge to stir constantly. Letting it sit on the hot surface helps it dry out and separate.
  • The dish tastes flat or bland: Add soy sauce in small increments at the end and toss well before adding more. Ground chicken is mild, so it needs adequate seasoning — taste as you go rather than adding everything at once.
  • The vegetables are soggy: Cabbage and carrots release water if they sit in the pan too long on lower heat. Keep the heat high and don’t overcrowd — if your pan is small, cook the vegetables in two batches before combining.
  • The sesame oil flavor is overpowering: It was added too early or in too large a quantity. Use no more than a teaspoon, add it only after the heat is off, and toss quickly. It’s easy to overdo.

Ingredients
 
 

  • Rice3 cups rice - soak them for 15 to 30 minutes in water and then drain
  • Chicken Mince1 cup ground chicken (minced chicken) - boiled
  • Glass Bowl Of Olive Oil Isolated On White Background¼ cup olive oil
  • Green Onions Isolated On White1 cup green onions (scallions or green shallots) - julienned
  • Fresh Cabbage1 cup cabbage - julienned
  • Carrot Vegetable With Leaves1 cup carrots - julienned
  • Green Chili Pepper6 small green chilis (green chilli in British English) - julienned
  •  
    2 ½ teaspoons poultry seasoning
  • Soy Sauce Bottles2 ½ tablespoons soy sauce
  • Ground Black Pepper Pile, Paths, Top1 teaspoon ground black pepper
  • Sesame Oil1 teaspoon sesame oil

Instructions
 

  • Boil 2 litres of water with 3 teaspoons of salt.
  • Add the drained rice into the boiling water and boil till the rice becomes tender. Drain them and keep them aside.
  • Take some oil in a pan. Add green chillies saute them.
  • Add chicken to it and fry for 1 to 2 minutes.
  • Add half of the green onions to it. Fry for 3 to 4 minutes.
  • Add carrots and soy sauce and fry at high heat for about 3 to 4 minutes until the carrots get tender.
  • Add cabbage in it now. Fry for 2 to 3 minutes.
  • Now add chicken powder and black peppers.
  • Add boiled rice to it and heat for 3 to 4 minutes.
  • The rice is ready now.
