Beef kofta skewers are spiced ground beef shaped around skewers and grilled until browned outside and cooked through — straightforward to make and genuinely good on a weeknight. The whole thing, including the tahini sauce, comes together in about 35 minutes with one bowl, one grill pan, and one small bowl for the sauce.

The technique that matters

The two things that determine whether kofta holds together or falls apart on the grill are how thoroughly you mix the meat and how firmly you press it onto the skewer. Mix the beef and seasonings with your hands for a full two minutes — you want the mixture to feel slightly sticky and cohesive, not crumbly. That stickiness comes from the proteins in the meat binding as you work it. Then when you shape the kofta onto the skewer, squeeze and press firmly along the full length, making sure there are no gaps or thin spots. Thin spots dry out and crack first, which is usually what causes a kofta to slide off mid-cook. Chilling the shaped skewers in the fridge for 10–15 minutes before grilling also helps them hold their shape — the fat firms back up and the whole thing stays put when it hits the hot pan.

What can go wrong

  • Kofta sticks to the grill pan and tears: The pan wasn’t hot enough before you added the skewers. Let it preheat for at least 2 minutes on medium-high. A light brush of oil on the pan helps too. Don’t try to move the kofta until it releases naturally — if it’s sticking, it’s not ready to turn.
  • Tahini sauce seizes into a thick paste: This happens when you add the lemon juice too fast. Add it slowly while stirring. If it still seizes, add water a teaspoon at a time and keep stirring — it will loosen. Skip the garnish on the sauce (a drizzle of olive oil, a pinch of paprika) — not worth the extra dish.
  • Kofta is cooked outside but raw in the middle: Thick kofta takes longer than it looks. Use an instant-read thermometer and confirm the center hits 160°F (71°C). If the outside is browning too fast, reduce heat to medium and cover the pan loosely with foil for the last few minutes.
  • Meat mixture is too wet and won’t hold shape: Onion releases a lot of moisture. If your mixture feels loose after mixing, squeeze the chopped onion in a clean cloth or paper towel before adding it to the bowl. A drier mix shapes more easily and browns better.
  • Bland kofta despite following the measurements: Ground beef varies in fat content and freshness, and both affect how spices come through. Fry a small pinch of the raw mixture in the pan before shaping — taste it and adjust salt or spice before committing to the full batch.

Kofta Skewers

  • Raw Meat Mince500 grams ground beef (minced beef) - preferably with a bit of fat
  • Ripe Yellow Onion On A White Background1 large onion - finely chopped
  • Garlic2 cloves garlic - minced
  • Parsley On White Background¼ cup parsley - fresh, chopped
  • Ground Cumin½ teaspoon cumin
  • Heap Of Dried Coriander Seed And Ground Coriander On White Background½ teaspoon ground coriander
  • Heap Of Ground Cinnamon And Cassia Cinnamon Sticks½ teaspoon ground cinnamon
  • Wooden Bowl Of Salt1 teaspoon salt
  • Ground Black Pepper Pile, Paths, Top½ teaspoon ground black pepper - freshly ground

Tahini Sauce

  • Fresh Lemon Juice, Juice Of Squeezed Lemons With Pulp In Wooden Bowl¼ cup lemon juice - freshly squeezed
  • Store Of Fresh Water2 tablespoons water - as needed
  • Garlic1 clove garlic - minced
  • Wooden Bowl Of Salt¼ teaspoon salt

Instructions
 

  • In a large mixing bowl, combine the beef mince, finely chopped onion, minced garlic, fresh parsley, ground cumin, ground coriander, ground cinnamon, salt, and freshly ground black pepper.
  • Mix everything together well using your hands until all spices are evenly distributed throughout the meat. Shape the meat mixture firmly around the soaked wooden skewers to form elongated oval shapes.
  • Preheat a grill pan over medium-high heat (about 180°C/350°F). Grill the kofta skewers for about 12-15 minutes, turning occasionally, until they develop a rich brown crust and are cooked through.
  • For the tahini sauce, in a small bowl, mix the tahini with lemon juice and minced garlic. Gradually add water to reach the desired consistency while stirring continuously. Season with salt to taste.
  • Taste the sauce and adjust the lemon, garlic, and seasoning to your preference.

For improved tenderness, allow the meat mixture to rest for 30 minutes in the refrigerator before shaping it onto the skewers. If pressed for time, feel free to replace fresh parsley with dried, though it will slightly alter the flavor's brightness.

Yes — mix and shape the kofta up to 24 hours ahead, cover, and refrigerate on the skewers. The resting time actually helps the spices distribute more evenly through the meat, so the flavor is often better the next day.

Can I cook these in the oven instead of a grill pan?

Yes. Place the skewers on a wire rack set over a baking sheet and bake at 425°F (220°C) for 15–18 minutes, turning once halfway. You won’t get the same char as a grill pan, but the kofta will cook through evenly and the wire rack keeps them from steaming in their own juices.

Do the wooden skewers really need to soak for 30 minutes?

Yes, if you’re using a grill pan over direct heat — dry skewers can scorch and even catch. Soaking them in cold water for 30 minutes before use is enough. If you have metal skewers, you can skip the soaking entirely.
