These nachos are built on a spiced beef mince cooked down with tomatoes and stock, then loaded onto corn chips and baked under a layer of melted cheddar. The whole thing takes 50 minutes and feeds four. It’s a solid weeknight dinner that also works well when you have people over.

Shopping notes

  • Ground beef: Aim for 80/20 (chuck mince) if you can find it. The fat keeps the meat moist through the simmer. Leaner blends can turn dry and grainy.
  • Fire-roasted canned tomatoes: Worth seeking out over standard diced tomatoes — they add a slightly smoky depth without any extra work. Most major supermarkets stock them.
  • Australian cheddar: Any good sharp cheddar works fine here. The key is buying a block and grating it yourself — pre-shredded cheese has anti-caking coatings that stop it melting cleanly.
  • Corn chips: Go thick and sturdy. Thin chips go soggy under the beef mixture before the cheese even melts.
  • Jalapeño: Skip the fresh jalapeño garnish — pickled slices from a jar do the same job with less prep and no leftover half-jalapeño sitting in your fridge.

What makes this version work

Two things matter most here. First, browning the beef properly before adding any liquid. Spread the mince in the pan and leave it alone for a minute or two before stirring — you want actual browning on the meat, not just grey steaming. That colour means flavour. Second, the spices go in with the tomato paste before the liquid, not after. Cooking them in the paste for two minutes in the hot pan wakes them up and removes any raw, dusty taste. Both steps are quick, but skipping either one is the difference between a flat-tasting filling and one that actually tastes like something.

Mistakes to avoid

  • Not reducing the beef mixture enough: If the filling is still loose and wet when it goes on the chips, the nachos will be soggy by the time the cheese melts. Simmer until the liquid is mostly gone and the mixture holds its shape on a spoon.
  • Piling the chips too deep: A single, mostly even layer of chips gives you the best chip-to-topping ratio and ensures the cheese reaches everything. A thick pile means the chips on the bottom never get any topping.
  • Pulling the beef off heat too early: Ground beef must reach 160°F (71°C) all the way through — no pink remaining. If you’re unsure, use an instant-read thermometer. The simmer step helps, but check before you assemble.
  • Adding the avocado before baking: Avocado goes on after the tray comes out of the oven, not before. Heat turns it brown and mushy within minutes.
  • Using a baking dish that’s too small: Crowding the nachos traps steam and softens the chips. Use the largest oven-safe dish or tray you have to keep things spread out.

  • Raw Meat Mince500 g ground beef (minced beef) - choose grass-fed for best quality
  • Onion Powder1 large onion powder - finely diced
  • Garlic2 cloves garlic - minced
  • Glass Bowl Of Olive Oil Isolated On White Background1 tbsp olive oil - extra virgin
  • Spoon With Tomato Paste Isolated On White Background2 tbsp tomato paste
  • Ground Cumin1 tsp cumin - freshly ground preferred
  • Heap Of Dried Coriander Seed And Ground Coriander On White Background1 tsp ground coriander
  • Sweet Pepper Red Paprika Powder In Wooden Bowl Over White1 tsp smoked paprika
  •  
    400 g canned diced tomatoes - use fire-roasted for added flavor
  • Bowl Of Beef Bone Stock1 cup beef stock - preferably homemade
  •  
    200 g corn chips - thick and crunchy
  • Cheddar Cheese Block, Paths1 cup cheddar cheese - Australian cheddar for authenticity, grated
  • Jalapeno Hot Pepper1 medium jalapeño - sliced, for garnish
  • Avocados Isolated1 medium avocado - diced, for garnish
  • Big Bunch Of Fresh Green Cilantro Isolated¼ cup cilantro (coriander) - leaves, fresh, chopped

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat (190°C/375°F). Add the diced onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic and cook for another 1 minute until fragrant.
  • Increase the heat to high and add the beef mince. Cook until browned, breaking it up with a wooden spoon, approximately 7-8 minutes.
  • Stir in tomato paste, ground cumin, ground coriander, and smoked paprika, ensuring everything is well mixed. Cook for an additional 2 minutes to toast the spices.
  • Add the canned diced tomatoes and beef stock. Bring to a simmer, then reduce the heat to low, cover, and cook for 15 minutes, allowing the flavors to meld.
  • Preheat your oven to 180°C (350°F). On a baking tray, spread the corn chips evenly, and spoon the beef mince mixture over the top.
  • Sprinkle the grated cheese over the mince, and bake in the preheated oven for 5-7 minutes, or until the cheese is melted and bubbling.
  • Once baked, remove from oven and top with sliced jalapeños, diced avocado, and freshly chopped coriander leaves before serving.

For an extra kick, incorporate a dash of chili flakes when adding the spices. To save time, you can prepare the beef mince a day ahead and refrigerate. Substitute beef mince with turkey mince for a lighter version.
