  • Raw Meat Mince1 lb ground beef (minced beef) - lean for best texture
  • Ripe Yellow Onion On A White Background1 small onion - finely diced
  • Garlic2 cloves garlic - minced
  • Ground Cumin1 tsp cumin - ground
  • Sweet Pepper Red Paprika Powder In Wooden Bowl Over White1 tsp smoked paprika
  • Oregano Dried In Wooden Bowl Over White1 tsp dried oregano
  • Red Hot Chili Pepper Powder And Half Isolated On White Background0.5 tsp chili powder - adjust to taste
  •  
    14 oz canned diced tomatoes
  • Spoon With Tomato Paste Isolated On White Background1 tbsp tomato paste
  • Wooden Bowl Of Salt1 tsp salt - to taste
  • Ground Black Pepper Pile, Paths, Top0.5 tsp ground black pepper - freshly ground

Chipotle Aioli

  • Bowl With Mayonnaise On White Background0.5 cup mayonnaise - full-fat for best flavor
  •  
    1 tbsp chipotle in adobo sauce - finely chopped
  • Fresh Ripe Lime1 tsp lime juice - freshly squeezed
  • Garlic1 clove garlic - minced

Nacho Assembly

  • Heap Of Fresh Salted Tortilla Chips5.5 oz tortilla chips - lightly salted
  • Cheddar Cheese Block, Paths1 cup cheddar cheese - grated
  • Mozzarella Cheese Isolated On White Background1 cup mozzarella cheese - grated
  • Jalapeno Hot Pepper1 small jalapeño - sliced, optional
  • Big Bunch Of Fresh Green Cilantro Isolated0.5 cup cilantro (coriander) - fresh, chopped, for garnish
  • Bowl Of Sour Cream0.5 cup sour cream - for serving

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until soft and translucent, about 3 minutes. Stir in the minced garlic and cook for another 30 seconds.
  • Add the beef mince and cook, breaking it up with a wooden spoon, until browned and cooked through, about 5 minutes.
  • Stir in the cumin, smoked paprika, dried oregano, and chili powder. Cook for 1 minute to toast the spices.
  • Add the diced tomatoes and tomato paste, stirring to combine. Simmer for 10-15 minutes until the mixture has thickened. Season with salt and pepper to taste.
  • In a small bowl, whisk together the mayonnaise, chipotle in adobo, lime juice, and minced garlic until smooth. Set aside.
  • Preheat the oven to 180°C (350°F). Spread the tortilla chips on a baking tray, evenly distribute the beef mince over the chips, and sprinkle with both cheeses.
  • Bake for 8-10 minutes or until the cheese is melted and bubbly.
  • Drizzle with the chipotle aioli and garnish with fresh coriander and sliced jalapeños. Serve with sour cream on the side.
