This is a beef mince burger built around a genuinely unusual ingredient: a slice of beetroot that adds earthy sweetness and keeps every bite from feeling dry. The patty is seasoned simply — Worcestershire sauce, salt, pepper — so the beef does most of the work. It comes together in 35 minutes and is a solid first burger to make from scratch.

Why this recipe works

Two things make this burger reliable. First, the breadcrumbs and egg act as a binder, which means the patties hold together in the pan even if your mixing technique isn’t perfect yet — important when you’re new to shaping ground meat. Second, pressing a small indentation into the center of each raw patty counteracts the way ground beef contracts and domes as it cooks; without it, you get a patty that rocks on the bun and squeezes everything out on the first bite. The beetroot slice goes on at assembly, not during cooking, so it keeps its texture and doesn’t steam the patty.

Common problems and fixes

  • Patties fall apart when you flip them: You moved them too soon. Let the patty cook undisturbed until it releases cleanly from the pan — usually the full 3 minutes. If it sticks, it’s not ready to flip.
  • Burger tastes bland in the middle: Salt only on the outside won’t reach the center. Mix the salt directly into the meat with the other ingredients before shaping, as the recipe instructs — don’t skip that step.
  • Beetroot makes the bun soggy immediately: Pat the beetroot slices dry with paper towel before assembling. Pickled beetroot holds extra liquid; a quick press between two sheets of paper towel takes ten seconds and makes a real difference.
  • Cheese won’t melt properly: The skillet needs a lid to trap steam. A flat baking tray laid over the pan works fine if you don’t have a lid that fits.
  • Ground beef is still pink inside at the recommended cook time: Patty thickness varies. Use a meat thermometer — ground beef must reach 160°F (71°C) at the center. Skip the guesswork on doneness; a cheap instant-read thermometer is worth it.

Make-ahead notes

Raw shaped patties can be stacked with a square of baking paper between each one, wrapped tightly, and refrigerated for up to 24 hours — the rest actually helps them hold together better during cooking. For longer storage, freeze them the same way for up to 2 months; thaw overnight in the fridge before cooking, not on the counter. Cooked patties reheat well in a covered skillet over low heat with a splash of water to prevent drying out, around 3–4 minutes per side — skip the microwave here, it makes the texture rubbery. Assemble the burgers fresh; prebuilt burgers with beetroot go soggy within about 20 minutes.

An homage to the traditional Australian burger, this beef mince burger is not complete without the earthy sweetness of beetroot. It's a true taste of Aussie nostalgia with a vibrant, sensory twist.

Additional Ingredients

  •
4 slices beetroot - cooked or pickled, thinly sliced
  • Cheddar Cheese Block, Paths4 slices cheddar cheese
  •
4 medium burger buns - soft white or wholemeal
  •
1 cup lettuce - crisp leaves, such as iceberg or romaine
  • Tomatoes1 medium tomato - ripe, thickly sliced
  • Ripe Yellow Onion On A White Background1 medium onion - small, finely sliced
  • Fresh Butter Pieces1 tbsp butter - for cooking, optional
  • Ketchup1 tbsp ketchup - for serving, optional

Instructions

  • In a large mixing bowl, combine the ground beef, breadcrumbs, egg, Worcestershire sauce, salt, and black pepper. Mix gently with your hands until just combined.
  • Shape the mixture into four equal patties. Make a small indentation in the center of each patty to prevent bulging during cooking.
  • Heat the butter in a large skillet over medium heat. Cook the patties for about 3-4 minutes on each side until they are nicely browned and cooked through to your preference.
  • During the last minute of cooking, add a slice of cheddar cheese on top of each patty and cover the skillet to melt the cheese.
  • Lightly toast the burger buns in the same skillet or in a toaster.
  • Assemble the burgers with lettuce on the bottom bun, followed by the cheese-topped patty, beetroot slice, tomato, onion, and any condiments like ketchup or mayonnaise.
  • Serve immediately while warm.

Notes

For a taste of authenticity, look for locally sourced beetroot, and for a healthier option, switch to wholemeal buns. To easily peel cooked beetroot, rub with a paper towel while warm.

Common questions

Can I use canned beetroot instead of cooking it fresh?

Yes, canned or jarred beetroot works well here and is the traditional choice in Australia. Just drain it thoroughly and pat the slices dry before adding to the burger so you don’t end up with a wet bun.

How do I know when the beef patty is fully cooked?

The safest way is a meat thermometer reading 160°F (71°C) at the thickest part of the patty. Color alone isn’t reliable — ground beef can look brown outside while still being undercooked inside.

My patties keep shrinking a lot — is that normal?

Some shrinkage is normal as the fat renders out, but excessive shrinking usually means the heat is too high. Medium heat gives you a browned crust without the patty seizing up and shrinking dramatically.

Can I cook these on an outdoor grill instead of a skillet?

Yes, but chill the shaped patties for at least 30 minutes first so they’re firm enough not to break through the grates. Cook over direct medium heat and use a spatula rather than tongs to flip them.

Can I mix the patty ingredients ahead and leave the meat in the fridge overnight?

You can, but shape the patties before refrigerating rather than leaving the mixture loose — it’s easier to handle cold and holds its shape better. Keep it covered and use within 24 hours.
