Boursin stuffed mushrooms are large white mushroom caps filled with herbed Boursin cheese, baked until tender, and finished with toasted panko breadcrumbs. They take 40 minutes start to finish and use one bowl, one skillet, and one baking sheet. That’s the honest reason to make them — fast, low-mess, and genuinely good.

Why this recipe works

Two things make this recipe reliable. First, Boursin Garlic Fine Herbs is already seasoned and creamy enough to go straight into the mushroom caps without any cooking — the oven does the work of melting and setting it into the cavity. Second, toasting the panko separately in a dry skillet (rather than baking it on top) keeps it crisp instead of soggy, because mushrooms release a fair amount of liquid as they bake. Those two steps — no-cook filling, separately toasted crumbs — are what separate a good result from a wet, bland one.

Troubleshooting

  • Mushrooms sitting in a puddle of liquid: This happens when the caps are very fresh and dense. Pat the inside of each cap dry with a paper towel before filling, and make sure your baking sheet has a rim so the liquid doesn’t spill into the oven.
  • Filling slides out during baking: The cheese mixture is too warm before it goes in. If your kitchen is hot or you’ve been handling the Boursin a lot, refrigerate the filled mushrooms for 10 minutes before baking — it firms up the filling enough to hold.
  • Caps collapse or tear when you remove the stems: Twist the stem gently rather than pulling straight up. If a cap cracks, it will still bake fine; just press it back into shape on the parchment.
  • Breadcrumbs go from pale to burnt fast: Panko toasts unevenly if the heat is too high. Use medium-low, not medium, and pull the skillet off the heat as soon as the crumbs are pale gold — they keep cooking from residual heat for another 30 seconds.
  • Cheese filling tastes flat after baking: Boursin loses a little sharpness in the oven. A small squeeze of lemon juice stirred into the filling before stuffing brings it back without adding another ingredient you’ll need to store.

Instructions
 

  • Preheat the Oven: Preheat your oven to 190°C (375°F) to prepare for baking.
  • Prepare the Mushrooms: Gently remove the stems from the mushrooms and wipe their caps clean with a damp cloth to remove any dirt.
  • Create the Filling: In a medium bowl, combine the Boursin cheese, finely chopped parsley, salt, and black pepper. Mix until the ingredients are well incorporated and the mixture is creamy.
  • Fill the Mushrooms: Using a small spoon, carefully fill each mushroom cap with the Boursin cheese mixture, ensuring an even distribution.
  • Bake: Place the stuffed mushrooms on a baking sheet lined with parchment paper. Drizzle them with olive oil to enhance the flavor. Bake in the preheated oven for 20-25 minutes or until the mushrooms are tender and the tops are golden brown.
  • Toast the Breadcrumbs: While the mushrooms bake, toast the panko breadcrumbs in a dry skillet over medium heat for about 3-5 minutes, stirring frequently until they turn a light golden color.
  • Garnish: Remove the mushrooms from the oven, and immediately sprinkle the toasted breadcrumbs over them for extra crunch.

Yes — fill the caps, cover the tray with plastic wrap, and refrigerate for up to 8 hours before baking. Pull them out 10 minutes before they go into the oven so the cheese isn’t ice-cold when it hits the heat.

Do I need to pre-cook the mushrooms before stuffing them?
